3/4 cup almonds, toasted and chopped
Additional powdered sugar

3/4 cup packed brown sugar
1 large egg, room temperature
1/4 cup 2% milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add the egg, milk and vanilla; mix well. Combine the flour, cocoa, baking powder, salt and baking soda; gradually add to creamed mixture. 2 tablespoons light corn syrup
1 teaspoon instant coffee granules
1 (10 ounce) package nabisco chocolate wafer cookies, finely crushed
3/4 cup sifted powdered sugar
3/4 cup chopped almonds, toasted
sifted powdered sugar

Steps:

  • Combine first 3 ingredients; let stand 5 minutes. Stir until coffee granules dissolve.
  • Combine cookie crumbs, 3/4 cup powdered sugar, and almonds; stir well. Pour coffee mixture over crumb mixture, stirring well.
  • Shape into 1-inch balls; roll in powdered sugar twice to coat well. Store in airtight container up to 1 week.
