Time 30m

Number Of Ingredients 9

2 cup All-Purpose Flour
1 tsp Baking Powder
1/4 tsp Salt
1 cup Light Brown Sugar (firmly packed)
1/2 cup Unsalted Butter
1 Large Egg
1 tsp Vanilla Extract
2 tbsp Unsweetened Cocoa Powder (to be added only after dividing the dough in half)
1 cup Demerara Sugar (for rolling cookie roll in)

Steps:

  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set to the side.
  • Using a hand-held mixer or stand mixer fitted with a paddle attachment, cream the light brown sugar and unsalted butter together thoroughly on medium-high speed until light and fluffy.
  • Add in the egg and vanilla extract.
  • Switching the mixer speed to low, gradually add in the whisked dry mixture until well combined.
  • Divide the dough in half. Roll half of the dough on a lightly floured sheet of wax or parchment paper to form a 9" x 12" rectangle, approx. 1/8" thick. Set aside.
  • With the other half of dough, blend in the unsweetened cocoa powder and then roll out the chocolate dough onto another lightly floured sheet of wax or parchment paper to a 9" x 12" rectangle.
  • Turn the chocolate layer onto the vanilla layer (so the vanilla layer will be on the outside of the roll). Remove the wax paper from the top and trim any rough edges of the rectangle.
  • Carefully roll the 2 layers of dough into a jelly roll.
  • Roll the pinwheel cookie dough roll in demerara sugar (optional step).
  • Double wrap the roll of cookie dough securely in plastic wrap and chill until form. You can chill the dough either in the refrigerator for 2-3 hours or overnight - or - chill in the freezer for 1 hour.
  • When ready to bake, adjust the oven rack to the 2nd level position and preheat the oven to 350ºF.
  • Using a sharp knife, slice the chilled cookie dough log into cookies approximately 1/8" thick and place on a parchment lined cookie sheet.
  • Bake for 8-10 minutes or until they are a light golden brown on the top and edges. Allow to cool for 10 minutes before transferring to a cooling rack.
  • Keep cookies stored in an airtight container with a slice of bread for up to a week.

POINSETTIA PINWHEEL COOKIES

Poinsettia Pinwheel Cookies image

Despite the intricate design, these festive pinwheels are simple to create. The cream cheese in the cookie dough adds just the right amount of pliability, so you can cut, fold and shape with ease. We decorated the cookies with white, red and green coarse sanding sugar, sometimes called pearlized sugar, but you can feel free to swap in plain confectioners' sugar. They'll look stunning either way!

Categories     dessert

Time 4h30m

Yield about 18 cookies

Number Of Ingredients 9

One 8-ounce package cream cheese, at room temperature
2 sticks (1 cup) unsalted butter, at room temperature
3 tablespoons granulated sugar
2 3/4 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/2 teaspoon fine salt
Red coarse sanding sugar, for decorating
White coarse sanding sugar, for decorating
Green coarse sanding sugar, for decorating
18 to 20 yellow candy-coated chocolates, such as M&Ms

Steps:

  • Beat the cream cheese, butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 2 minutes, scraping down the bowl with a rubber spatula as needed.
  • Reduce the mixer speed to low and beat in the flour and salt until combined. Divide the dough between 2 large pieces of plastic wrap. Flatten each into a 1/2-inch-thick disk and wrap. Refrigerate until firm, at least 1 hour and up to overnight.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
  • Roll out 1 disk of dough on a lightly floured surface until about 1/8 inch thick, dusting with more flour as needed.
  • Cut out 3-inch squares using a sharp paring knife or a 3-inch square cutter (you should be able to get 6 or 7 squares). Lift the cutouts using an offset spatula and arrange 2 inches apart on one of the prepared baking sheets. Re-wrap and refrigerate the dough scraps while you shape the pinwheels.
  • Cut a 1 1/2-inch slit in all four corners of each dough square to form 8 points. Fold over every other point and press into the center of the square. Refrigerate while you make the leaves.
  • Cut enough leaves out of the scraps using a sharp paring knife or a leaf-shaped cutter, making 2 leaves for each pinwheel. Arrange the leaves on the other prepared baking sheet. Lightly brush with water and sprinkle with green sanding sugar. Set aside in the refrigerator.
  • Lightly brush the pinwheels with water and sprinkle half with red sanding sugar and half with white sanding sugar. Brush the end of 2 leaves and tuck underneath a pinwheel on opposite sides. (No need to press the dough; it will meld together as it bakes.)
  • Bake, rotating the baking sheet halfway through, until the cookies are puffed and the edges are golden, 20 to 25 minutes. Immediately press a chocolate candy in the center of each warm cookie. Let cool 5 minutes, then transfer the cookies to a wire rack to cool completely.
  • Repeat with the remaining disk of dough, and any remaining scraps, to make more cookies.

CHOCOLATE CHIP HAZELNUT PANCAKES

Chocolate Chip Hazelnut Pancakes image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 20m

Yield 8 to 10 pancakes

Number Of Ingredients 10

2 cups whole-grain pancake mix, such as Bob's Red Mill
1 1/2 cups milk
2 tablespoons brown sugar
2 tablespoons vegetable oil
2 large eggs
1/2 cup chocolate chips, plus more for serving
2 tablespoons hazelnuts, chopped, plus more for serving
Butter, for frying
1/2 cup chocolate-hazelnut spread, such as Nutella, for drizzling
1/2 cup caramel sauce, for drizzling

Steps:

  • Make the batter by combining the pancake mix, milk, brown sugar, oil and eggs in a large bowl. Stir in the chocolate chips and nuts.
  • Heat a nonstick skillet or griddle over medium heat and add a little butter. Drop in about 1/4 cup of the batter per pancake and fry on both sides until dark golden, about 2 1/2 minutes per side. Continue with the remaining batter, adding more butter if needed.
  • Meanwhile, warm the chocolate-hazelnut spread and caramel sauce in the microwave or in separate saucepans over low heat.
  • Drizzle the warm sauces over the pancakes and serve with more chocolate chips and nuts.

Tips:

  • Prep the Dough Properly: Chilling the dough for at least 30 minutes before rolling and baking helps prevent the cookies from spreading too much and keeps the pinwheel layers distinct.
  • Work Quickly: Keep the dough cold while working with it. If the dough starts to get too warm and soft, place it back in the refrigerator for a few minutes to firm up.
  • Roll the Dough Evenly: Use a rolling pin to roll out the dough to a uniform thickness. This ensures that the cookies bake evenly.
  • Spread the Filling Generously: Don't be shy with the hazelnut filling! Spread it evenly over the dough, leaving a small border around the edges.
  • Roll the Dough Tightly: When rolling up the dough, make sure to do it tightly. This will help keep the filling inside the cookies and prevent it from oozing out.
  • Chill the Rolled Dough: After rolling up the dough, chill it for at least 30 minutes before slicing and baking. This helps the cookies hold their shape and prevents them from spreading too much.
  • Bake at the Right Temperature: Bake the cookies at the recommended temperature and for the specified time. Overbaking can dry out the cookies and make them crumbly.

Conclusion:

These chocolate hazelnut pinwheels are a delightful treat that combines the rich flavors of chocolate and hazelnut in a crispy, buttery cookie. With a simple dough and a decadent filling, these cookies are sure to be a hit with everyone who tries them. Follow the tips above to ensure your cookies turn out perfectly every time. Enjoy!
