GOOEY BUTTER COOKIES are the perfect combination of gooey butter cake, chocolate brownies, and soft cookies! Being from St. Louis, we are big fans of gooey butter cake. It's even better when you add chocolate and make it into cookie form! Chocolate Cake Cookies just got an upgrade. This Chocolate Gooey Butter Cookies Recipe is one of my favorite Christmas cookie recipes!

8 ounces cream cheese (227 grams, room temperature (1 brick))
8 tablespoons unsalted butter (113 grams, room temperature (1 stick))
1 large egg (50 grams, room temperature)
1 teaspoon pure vanilla extract (4 grams)
¼ teaspoon kosher salt
15.25 ounces Dark Chocolate Fudge Moist Chocolate Cake Mix (432 grams (1 box))
1 cup powdered sugar (113 grams (SEE NOTE))

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter until smooth, approximately 3 minutes.
  • Mix in the egg and vanilla extract.
  • Add the salt and cake mix and beat on medium until smooth, about 1½ minutes.
  • Refrigerate the dough for 1-2 hours, or until batter is firm enough to roll into balls.
  • When ready to bake, preheat oven to 350°F and line a baking sheet with parchment paper. Place the powdered sugar in a shallow bowl.
  • Roll the chilled dough into 1-tablespoon-sized balls and roll the balls in the powdered sugar. Place the cookies 2-inches apart on the prepared baking sheet.
  • Once the oven has fully preheated, bake the cookies for 12 minutes (no longer). The cookies will look and feel a little wobbly and soft.
  • Place tray on a cooling rack to cool for 2 minutes, and dust the cookies with more powdered sugar (I use a mesh sieve).
  • Transfer individual cookies to the cooling rack to completely cool.
  • Dust with more powdered sugar, if desired.

1 teaspoon vanilla extract
for dusting confectioner's sugar
1 (18 oz) box moist chocolate cake mix
1 (8 oz) package room temperature cream cheese
1 egg
1 stick room temperature butter

Steps:

  • Preheat oven to 350 °F. In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner's sugar. Place on an ungreased cookie sheet, 2 inches apart. Bake 12 minutes. The cookies will remain soft and gooey. Cool completely and sprinkle with more confectioner's sugar, if desired. This recipe was on Paula's Food TV show. They are to die for! I made these because my partner will not eat anything with cream cheese in it. I thought I would actually have cookies to eat the next day. I was so wrong. I made a double batch and only had 3 cookies in all. I did not find these to be Gooey. More delicate and cake like. Be sure not to over bake. *Prep time includes 2 hour chilling time. *NOTE - On her show she did add oil...I don't know the amt. I added no oil the 4 times I have made these and I don't feel its needed...My hips agree :) UPDATE: I have also used FF Cream Cheese with good results. Any flavor cake mix works well! Please also note that the directions do state that dough will be very stiff. I use my stand mixer with no problems. Please use caution if using a hand mixer.

1 recipe Double Chocolate Ooey Gooey Butter Cake, recipe follows
Cookie crumbs, your choice
Handful of nuts, preferably pecans
Hot fudge
Butter, for greasing pan, plus 16 tablespoons (2 sticks) butter, melted, divided
1 (18.25-ounce) package chocolate cake mix
3 eggs, divided
1 (8-ounce) package cream cheese, softened
3 to 4 tablespoons cocoa powder
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1 cup chopped nuts

Steps:

  • Cut Ooey Gooey Butter Cake into bite-sized pieces, adding it to chocolate ice cream.Crumble your choice of cookies and add to the ice cream while adding your choice of nuts. Add hot fudge to your desire and mix together.
  • Preheat oven to 350 degrees F. Lightly butter a 13 by 9-inch baking pan.
  • In a large bowl, combine the cake mix, 1 egg, and 8 tablespoons (1 stick) melted butter, and stir until well blended. Pat mixture into prepared pan and set aside. In a stand mixer, or with a hand mixer, beat the cream cheese until smooth. Add the remaining 2 eggs, and the cocoa powder. Lower the speed of the mixer, and add the powdered sugar. I saw this a month or so ago on Paula's Party and had to try it. Our family has found their new favorite ice cream! It is chocolate overload, so only for a true chocoholic!! :D This was made in individual containers on the show, but I made a whole dessert using a whole quart of ice cream and layered in a bowl and ended up only using about 1/2 of the cake.

1 quart chocolate ice cream (We have used Triple Chocolate Ice Cream)
cookie crumbs, your choice
nuts, preferably pecans
hot fudge

1 (18 1/4 ounce) package chocolate cake mix
3 eggs, divided
1 cup butter, divided
1 (8 ounce) package cream cheese, softened
3 -4 tablespoons cocoa powder
1 (16 ounce) box powdered sugar
1 teaspoon vanilla
1 cup nuts, chopped

Steps:

  • Preheat oven to 350 degrees. Lightly butter a 13x9 pan.
  • In large bol, combine cake mix, 1 egg, and 8 T. (1/2 cup) melted butter, and stir until well blended. Pat mixture into prepared pan and set aside.
