Time 35m

Yield 8 to 10 servings

Number Of Ingredients 9

1/2 cup sugar
1/2 cup honey
1/2 cup crunchy peanut butter
1/2 teaspoon pure vanilla extract
10 cups popped popcorn
Salt, optional
6 ounces semisweet chocolate, melted
6 ounces white chocolate, melted
1 cup salted pretzels, crushed

Steps:

  • Mix the sugar and honey in a small saucepan and bring to a boil. Let simmer for 2 minutes. Remove from the heat and mix in the crunchy peanut butter. Continue to stir until the peanut butter is smooth, and then add the vanilla.
  • In a large mixing bowl, add the popped popcorn. If desired, lightly salt the popcorn. Pour the warm peanut butter mixture over the popcorn and stir with a long-handled wooden spoon until completely coated.
  • On a baking sheet lined with wax paper, pour the coated popcorn and distribute evenly. Drizzle with the melted semisweet chocolate, and then drizzle with the white chocolate. Sprinkle the crushed pretzels over the warm popcorn. Allow the chocolate to set about 20 minutes (or speed up the process by placing the baking sheet in the refrigerator). Once the popcorn is set, serve in a large serving bowl. Store tightly covered.

1/4 cup sliced almonds, chopped
1/4 cup Gold Medal™ all-purpose flour
1/4 teaspoon salt

  • Drop mixture by level tablespoonsful onto cookie sheet, spacing about 2 1/2 inches apart. Spray back of clean spoon with cooking spray, and press back of spoon to spread each mound into 2 1/2-inch circle, respraying as necessary to prevent sticking.

Time 1h45m

Yield 24

Number Of Ingredients 7

1/4 cup butter or margarine
1/2 cup sugar
1/4 cup light corn syrup
1/3 cup Gold Medal™ all-purpose flour
1/2 cup finely chopped almonds
1 teaspoon vanilla
1/2 cup semisweet chocolate chips

Steps:

  • Heat oven to 375°F (350°F for dark or nonstick pan). Line cookie sheet with cooking parchment paper.
  • In 2-quart saucepan, melt butter over medium heat. Stir in sugar and corn syrup. Heat to boiling over medium-low heat, stirring constantly, until sugar is dissolved. Remove from heat. Stir in flour, almonds and vanilla until blended. Quickly spread mixture into 11x10-inch rectangle on cookie sheet.
  • Bake 10 minutes or until brittle spreads thin and is deep golden brown. Cool 5 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.
  • In small resealable freezer plastic bag, place chocolate chips; seal bag. Microwave on High about 1 minute or until softened. Gently squeeze bag until chocolate is smooth; cut off tiny corner of bag. Squeeze bag to drizzle chocolate over brittle. Let stand 1 hour or until chocolate is firm. Break into irregular pieces.

Nutrition Facts : ServingSize 1 Serving

Tips:

  • To make the perfect lace brittle, use a candy thermometer to ensure the sugar syrup reaches the correct temperature.
  • Work quickly when pouring the sugar syrup onto the baking sheet, as it will start to harden and become difficult to spread.
  • If you find the sugar syrup is too thick to spread, add a few drops of water and stir until combined.
  • Be careful when melting the chocolate, as it can easily burn. Use a double boiler or microwave on low power, stirring frequently.
  • For a neater drizzle, place the chocolate in a piping bag or squeeze bottle.
  • Allow the chocolate drizzle to set completely before breaking the brittle into pieces.
  • Store the lace brittle in an airtight container at room temperature for up to 2 weeks.

Conclusion:

Chocolate drizzled lace brittle is a delicious and easy-to-make treat that is perfect for any occasion. With a few simple ingredients and a little bit of patience, you can create a beautiful and tasty confection that is sure to impress your friends and family. So next time you are looking for a sweet treat, give chocolate drizzled lace brittle a try!
