1 cup butter, softened
1-1/2 cups sugar
1/3 cup maraschino cherry juice
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 cup baking cocoa
1 cup sweetened shredded coconut
3/4 cup chopped maraschino cherries, drained and patted dry
1/2 cup miniature semisweet chocolate chips
TOPPING:
3/4 cup vanilla frosting
48 maraschino cherries with stems, drained and patted dry
1 cup miniature semisweet chocolate chips
1 teaspoon shortening

Steps:

  • Preheat oven to 375°. In a large bowl, beat butter and sugar until blended. Gradually beat in cherry juice and vanilla. In another bowl, whisk flour and cocoa; gradually beat into creamed mixture. Stir in coconut, cherries and chocolate chips., Shape dough into 48 balls (about 1-1/4 in.); place 2 in. apart on ungreased baking sheets. Press a deep indentation in center of each with the end of a wooden spoon handle. Bake 9-11 minutes or until set and bottoms are lightly browned. Remove from pans to wire racks to cool completely., Fill each cookie with 3/4 teaspoon frosting. Top with cherries. In a microwave, melt chocolate chips and shortening; stir until smooth. Spoon over cherries. Let stand until set.

2 1/2 cups finely chopped chocolate (recommended: Valhrona brand)
2 tablespoons whipping cream
1 cup butter
4 eggs
4 egg yolks
1/2 cup granulated sugar
2 teaspoons Armagnac
1/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder, plus more for sifting
Powdered sugar
Spun Sugar Halo, recipe follows
1 cup sugar
1/2 cup water

Steps:

  • Filling: In a heavy saucepan combine 1 cup of the chocolate and whipping cream. Stir over low heat until chocolate melts. Transfer mixture to a small bowl. Cover and chill for 45 to 60 minutes or until nearly set. Lightly grease and cocoa powder 6 (3/4-cup) souffle dishes. Divide chilled chocolate filling evenly between dishes. Place dishes in baking pan, set aside.
  • In a double boiler over low heat, stir butter and remaining 1 1/2 cups chocolate over low heat until melted. Remove from heat and let cool. Set aside.
  • Batter: Preheat oven to 400 degrees F.
  • In a large mixing bowl beat eggs, egg yolks, granulated sugar, and Armagnac on high speed for 5 minutes or until thickened and lemon-colored. With mixer on medium speed, beat in melted butter-chocolate mixture until combined. Sprinkle flour and cocoa powder over the chocolate mixture, beat on low speed until combined. Divide batter evenly among the dishes. Bake uncovered for about 15 minutes or until the cakes feel firm at the edge. Cool in dishes for 2 to 3 minutes. Using a knife, loosen cakes from side of dishes. Invert onto dessert plates. Sift cocoa powder onto plates, dust cakes with powdered sugar and serve with Spun Sugar Halos.
  • Combine sugar and water in a saucepan over medium heat until sugar is dissolved and mixture caramelizes, about 15 minutes. Drop syrupy mixture onto waxed paper in a circular "halo" and cool before peeling off waxed paper backing. Place halos on top of cakes as garnish.

Nonstick cooking spray or shortening, for the pan
1/2 cup unsweetened cocoa powder, plus more for dusting the pan
1 cup all-purpose flour
1/4 teaspoon kosher salt
1 1/2 cups sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted
1 tablespoon canola oil
1 teaspoon vanilla extract
2 large eggs
3/4 cup mini chocolate chips
15 chocolate sandwich cookies (I like Oreo)
Three 8-ounce blocks cream cheese, at room temperature
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
12 chocolate sandwich cookies, coarsely chopped
Chocolate sauce, optional, for garnish

Steps:

  • Preheat the oven to 325 degrees F. Coat a 9-by-13-inch baking pan with nonstick cooking spray or shortening and dust with cocoa powder. Set aside.
  • Combine the flour, salt and cocoa powder in a medium bowl. Combine the sugar, melted butter, oil, vanilla and eggs in a large bowl. Add the flour mixture to the butter mixture and stir until combined. Stir in the chocolate chips. Pour the batter into the bottom of the prepared baking pan. Arrange the chocolate sandwich cookies on top of brownie batter, spacing them out evenly.
  • Make the cheesecake layer. Beat the cream cheese and sugar in a large bowl until the mixture becomes fluffy. Slowly beat in the eggs, one at a time, until the batter is smooth. Add the vanilla, stirring until combined. Pour the cheesecake batter over the top of the chocolate sandwich cookies and brownie batter, spreading out evenly. Sprinkle the top with the chopped cookies. Bake until the edges are slightly golden brown and the center is a little jiggly, about 45 minutes. Remove to a wire rack to cool completely. Refrigerate for at least 2 hours or up to overnight. Cut into squares and serve with a drizzle of chocolate sauce, if desired.

While on vacation this summer, I read the book "Chocolate Chip Cookie Murder" by Joanne Fluke. The author included some very good cookie recipes throughout the book. I want to pass the book on to my swap partner in the Used Media Swap on Zaar, I am posting the recipes here so I can try them later. If you make the cookies before me, please leave a review to let us know how good they are. FYI, the author did not indicate how many cookies the recipe makes so I guessed. I will post a correction as soon as I know better. Oh, one more thing - the book was fun to read. (Author's note about this recipe: "A plate of these should be in every psychiatrist's office - - two Chocolate-Covered Cherry Delights will lift anyone out of a depression)

1 cup butter, melted
2 cups white sugar
2 eggs
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons vanilla
1 cup cocoa powder
3 cups flour (not sifted)
2 (10 ounce) jars maraschino cherries
2 cups chocolate chips (6 oz package)
1/2 cup sweetened condensed milk

Steps:

  • Preheat oven to 350°F, rack in middle position.
  • Melt butter and mix in sugar.
  • Let mixture cool.
  • Add eggs, mix thoroughly.
  • Add baking powder, baking soda, salt, vanilla and cocoa, stirring after each addition.
  • Add flour and mix well (dough will be stiff and a bit crumbly).
  • Drain cherries, remove stems, reserve juice.
  • Pat dough into walnut-sized balls.
  • Place on a greased cookie sheet, 12 to a standard sheet.
  • Press down in center with thumb to make a deep indentation.
  • Place one cherry in each indentation.
  • In a saucepan, over simmering water (double boiler), combine the chocolate chips and condensed milk.
  • Heat on low until the chips are melted.
  • Add approximately 1/8 cup of reserved cherry juice and stir to a thick sauce.
  • If sauce is too thick, carefully add a little more juice. Test with a teaspoon. If it doesn't glob off, it is too thick.
  • Spoon the sauce over the center of each cookie, just enough to cover each cherry. Make sure it doesn't drip down the sides.
  • Bake at 350°F for 10-12 minutes.
  • Let cool on cookie sheet for 2 minutes.
  • Remove to rack to finish cooling.
