2 Cups All-purpose Flour
1 Cup Sugar
1/2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 Teaspoon Vanilla Extract
3 Large Eggs
3/4 Cup Dried Cherries
1 Cup Chopped Dark Chocolate Pieces

Steps:

  • Preheat oven to 350 degrees F.
  • Line a baking sheet with parchment paper.
  • In one bowl, stir together all the dry ingredients.
  • In a smaller bowl, whisk together the eggs and vanilla extract until blended.
  • Pour the egg mixture into the bowl with the dry ingredients, and stir with a wooden spoon until mixed.
  • Stir in the cherries and chocolate and then dump the mixture onto a lightly floured counter or cutting board.
  • Knead a minute or two by hand until the dough comes together.
  • Form into one long log about 14-inches long (for long biscotti), or two smaller logs about 8-inches long and place on the prepared baking sheet.
  • Bake about 25 minutes, or until the bottom is lightly browned, and the top feels set.
  • Cool 10 minutes and reduce the oven temperature to 325 degrees F.
  • Use a serrated knife the cut the log into 1-inch slices.
  • Lay the biscotti flat, side by side on the baking sheet and bake 10 minutes.
  • Turn the biscotti over and bake another 7 to 8 minutes until lightly browned. (The biscotti will crisp up as they cool)
  • Transfer the biscotti to a wire rack and cool completely before storing in an airtight container.

● 2 cups (12-ounce package) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels, divided
●2 cups all-purpose flour
● 1/4 cup NESTLÉ® TOLL HOUSE® Baking Cocoa
●1 teaspoon baking powder
●1/2 teaspoon salt
●3/4 cup packed brown sugar
●1/4 cup (1/2 stick) butter, softened
●2 large eggs
●1/2 teaspoon vanilla extract
●1 cup (about 5 ounces) dried cherries, chopped

Steps:

  • Preheat oven to 325º F. Grease baking sheet.
  • Microwave 2/3 cup morsels in small, uncovered, microwave-safe bowl on HIGH (100%) power for 45 seconds; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.
  • Combine flour, cocoa, baking powder and salt in small bowl. Beat sugar and butter in large bowl until light and fluffy. Add eggs and vanilla extract; beat until combined. Stir in melted chocolate. Gradually stir in flour mixture. Stir in cherries and 1 cup morsels.
  • Shape dough with floured hands on prepared baking sheet into two 9 x 2 1/2-inch logs.
  • Bake for 40 minutes or until slightly firm to the touch and cracked on top. Cool on baking sheet for 10 minutes. Slide log onto cutting board and cut each log into 12, 3/4-inch slices. Return to baking sheet cut side down. Bake, turning once, for 20 minutes or until firm. Remove to wire rack to cool completely.
  • Place remaining 1/3 cup chocolate morsels in small, heavy-duty plastic bag. Microwave on HIGH (100%) power for 30 to 45 seconds; knead. Cut a tiny corner from bag and drizzle over cooled biscotti. Let stand until drizzle is set. Store in tightly covered container at room temperature.

½ cup butter, softened
¾ cup white sugar
3 eggs
2 teaspoons almond extract
3 cups all-purpose flour
2 teaspoons baking powder
½ cup chopped candied cherries
½ cup mini semi-sweet chocolate chips
½ cup chopped white chocolate

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a large cookie sheet.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the almond extract. Combine the flour and baking powder; stir into the creamed mixture until just blended. Mix in candied cherries and mini chocolate chips.
  • With lightly floured hands, shape dough into two 10 inch long loaves. Place rolls 5 inches apart on the prepared cookie sheet; flatten each to 3 inch width.
  • Bake for 20 to 25 minutes, or until set and light golden brown. Cool 10 minutes. Using a serrated knife, cut loaves diagonally into 1/2 inch slices. Arrange slices cut side down on ungreased cookie sheets.
  • Bake for 8 to 10 minutes, or until bottoms begin to brown. Turn, and bake an additional 5 minutes, or until browned and crisp. Cool completely. Melt white chocolate in the microwave, stirring every 20 to 30 seconds until smooth. Drizzle cookies with melted white chocolate. Store in tightly covered container.

3 tablespoons Hershey's™ Special Dark™ Cocoa
1 1/2 teaspoons baking powder

Steps:

  • Heat oven to 350°F. Line 18x13-inch baking sheet with cooking parchment paper.
  • In medium bowl, mix flour, cocoa, baking powder and salt.

This is a delicious recipe that I originally got from my friend, Julie. I adapted it to use the ingredients I like, which are dried cherries and chocolate. You can substitute cranberries for the cherries, or not dip them in chocolate at all. The base recipe is just really good on it's own. On the optional ingredients: the pistachios are really great in it, but I usually don't use them because my bro has a peanut allergy and I make these for the holidays. I've also made it with or without the vanilla/almond extract, and it's great either way. It just adds a little more sweetness/nuttiness to them. Customize it to be whatever you want!

1 1/2 teaspoons baking powder
3/4 cup sugar

1/2-3/4 cup pistachios, coarsely chopped

Steps:

  • Preheat the oven to 350F and line a baking sheet with parchment paper.
  • Combine the dry ingredients first: whisking together the flour, baking powder and salt in a medium bowl.
  • In a large bowl, beat the sugar, lemon zest and butter until creamy. Add the eggs one at a time, beating until incorporation and scraping down the sides in between.
  • Add the flour mixture and beat until just blended, then stir in the cherries and (optional) pistachios.
  • Form the dough into 12" long x 3" wide logs on the parchment paper. Bake for about 40 minutes, or until light golden. Cool for 30 minutes.
  • Place the log on a cutting board and use a serrated knife to cut diagonally, 1/2"-3/4" slices. Lay the slices on the baking sheet and bake for another 15 minutes, or until they are a pale golden color. While they are cooking, get a pot of water boiling for your double boiler. Cool completely on a wire rack.
  • Place the chocolate chips in a small pot set over the pot of simmering water. Stir constantly to avoid burning the chocolate. When the chocolate is completely melted, dip the ends of the biscotti in and set them on a parchment sheet to set. Place all the biscotti in the refrigerator for about a half hour, until the chocolate firms up.
  • They can be made ahead, or frozen for up to 3 weeks.
