Time 2h40m

Yield 10 to 12 servings

Number Of Ingredients 13

2 1/2 cups all-purpose flour
3/4 cup Dutch-processed cocoa powder
1/2 teaspoon salt
8 large eggs, at room temperature
2 egg large yolks, at room temperature
1 tablespoon pure vanilla extract
2 teaspoons instant espresso powder
12 ounces unsalted butter (3 sticks), room temperature
2 1/2 cups sugar
6 ounces bittersweet chocolate, roughly chopped
6 ounces bittersweet or semisweet chocolate, finely chopped
8 tablespoons unsalted butter (1 stick)
1 tablespoon honey

Steps:

  • Place a rack in the middle of the oven and preheat to 350 degrees F. Butter and flour the bundt pan.
  • Sift the flour, cocoa, and salt into a medium bowl. Whisk the eggs, yolks, vanilla, and espresso powder together in a bowl and set aside.
  • In a heavy-duty mixer, beat the butter with the paddle attachment, on medium speed for 1 minute, or until smooth. Gradually pour in the sugar, 1/4 cup at a time, until the butter begins to lighten, about 3 minutes. Scrape down the sides of the bowl with a rubber spatula and beat, on medium-high, until light and fluffy, about 4 minutes more.
  • Adjust the mixer's speed to its lowest setting. Add 1/2 of the flour mixture and mix until completely absorbed before adding the rest. Scrape down the sides of the mixer then beat on medium-high for 30 seconds more.
  • Adjust again to low speed and add half the egg mixture, mix until blended and smooth. Add the remaining egg mixture and beat until almost blended. Remove the bowl from the mixer, and fold in the chocolate by hand. Take care not to over mix the batter.
  • Spoon the batter into the prepared pan and smooth the top with a spatula. Bake until a toothpick inserted into the center comes out clean, about 1 hour and 10 minutes.
  • Cool the cake in the pan, on a rack for 10 minutes. Turn the cake out of the pan, and cool right side up on a rack. If not serving the same day, wrap in plastic wrap and store at room temperature. Glaze just before serving. Cake can be frozen for 1 month.
  • For the glaze: Put all the ingredients in a microwave-safe bowl or glass measuring cup. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue heat until completely melted, about 1 minute more. Remove from the microwave and whisk until fully combined, smooth and glossy. While warm, pour glaze over cooled cake and do not spread. Serve as desired.

Categories     Pound Cake

Time 50m

Yield 6

Number Of Ingredients 10

½ cup unsalted butter, at room temperature
1 cup all-purpose flour
½ teaspoon salt
⅛ teaspoon ground nutmeg
½ cup firmly packed dark brown sugar
3 tablespoons white sugar
3 large eggs, at room temperature
2 teaspoons vanilla extract
¼ cup sour cream, at room temperature
⅓ cup mini chocolate chips

Steps:

  • Place butter into a small light-colored saucepan over medium heat. Cook, swirling pan frequently, until brown bits form on the bottom of the pan, and the butter begins to smell nutty, about 10 minutes. Immediately pour butter into a large mixing bowl, and allow to cool slightly.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a mini Bundt® pan.
  • Whisk together flour, salt, and nutmeg in a small bowl.
  • Add brown sugar and white sugar to the bowl with brown butter. Mix butter and sugars together until thoroughly combined. Add in eggs, 1 at a time, mixing very well after each addition. Mix in vanilla. Add in half of the flour mixture, mixing until just combined. Add in sour cream, mixing until just combined. Add in remaining flour mixture, and mix until just combined. Fold in mini chocolate chips.
  • Divide batter evenly between the mini Bundt® cavities.
  • Place pan into the preheated oven and bake until the cakes spring back lightly when touched, 15 to 20 minutes. Allow cakes to cool in the pan for 5 minutes before removing to a wire rack to cool completely.

Tips:

  • Precise Measurements: Baking is a science, so accurate measurements are crucial. Use a digital kitchen scale for precise results.
  • Quality Ingredients: Use high-quality chocolate, butter, and eggs for the best flavor and texture.
  • Creaming Butter and Sugar: Creaming butter and sugar together until light and fluffy is essential for incorporating air into the batter, resulting in a tender crumb.
  • Room Temperature Ingredients: Bring butter, eggs, and buttermilk to room temperature before mixing. This ensures they blend smoothly and evenly.
  • Do Not Overmix: Overmixing the batter can develop the gluten in the flour, resulting in a tough cake. Mix only until the ingredients are combined.
  • Proper Baking Pan: Use a bundt pan with a removable center tube for the crown shape. Grease and flour the pan thoroughly to prevent sticking.
  • Baking Time and Temperature: Bake the cake at the specified temperature and time. Use a toothpick inserted into the center to check for doneness; it should come out with just a few moist crumbs attached.
  • Cooling and Glaze: Allow the cake to cool completely in the pan before inverting it onto a serving plate. Drizzle the chocolate glaze over the cooled cake for a decadent finish.

Conclusion:

The Chocolate Crown Pound Cake is a stunning and flavorful dessert that is perfect for any occasion. With its moist and tender crumb, rich chocolate flavor, and elegant appearance, it is sure to impress your friends and family. Follow these tips for the best results, and enjoy this delicious treat that combines classic pound cake with the decadence of chocolate.
