2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2/3 cup baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1/2 cup whole milk
FILLING:
1/2 cup butter, softened
1-1/2 cups confectioners' sugar
1 cup marshmallow creme
1 teaspoon vanilla extract

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture alternately with milk, beating well after each addition. Refrigerate for at least 2 hours. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until edges are set. 6 tablespoons butter, softened
¼ cup white sugar
1 large egg
2 tablespoons corn syrup
1 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
⅓ cup semisweet chocolate chips
1 cup confectioners' sugar
¼ cup confectioners' sugar
½ cup butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Using an electric mixer, beat 6 tablespoons butter and 1/4 cup sugar in a large bowl until creamy. Add the egg; beat until smooth. Beat in corn syrup. Whisk together the flour and cocoa in a small bowl. Beat half of the flour mixture into the butter mixture until well incorporated. Beat in the remaining flour. Divide dough in half.

Filling: 1) Cook flour and milk until thickened in small heavy saucepan. 2) Let mixture cool completely. 3) Cream together confectioner's sugar, salt, margerine and vanilla in a medium bowl. 4) Add flour and milk mixture to creamed ingredients. Mix and beat until smooth. 5) Thickly spread filling on one Gob cookie and then place another on top to form a sandwich cookie.
