There are so many good Southern recipes using the famous Ritz cracker! Well, here is one of my favorites - the choc covered Ritz cookie. My kids love these, and the variations are endless. Sprinkle with color appropriate candies/sprinkles to match any occasion such as Halloween or Christmas - add before the chocolate hardens. Ingredient amounts are only estimates.

Time 25m

Yield 24 or more pieces

Number Of Ingredients 5

30 -35 saltine crackers or 30 -35 graham crackers
1 cup butter
1 cup brown sugar
1 teaspoon cinnamon (optional)
1 -1 1/2 cup semi-sweet chocolate chips or 1 -1 1/2 cup milk chocolate chips

Steps:

  • Preheat oven to 375°F and grease a baking sheet with sides.
  • Line prepared pan with crackers or graham wafers; cut crackers to fill the whole pan if necessary.
  • Bring butter and brown sugar to a boil in a heavy saucepan; continue to cook for 3 minutes more; pour over crackers.
  • Sprinkle with cinnamon, if using.
  • Bake for 15 minutes and remove from oven; immediately sprinkle with chocolate chips.
  • When chips are melted, spread over the top evenly.
  • Cool slightly and break into pieces.

Tips:

  • For the best results, use high-quality chocolate. A semisweet or bittersweet chocolate with a cocoa content of at least 60% will give the cookies the richest flavor.
  • If you don't have any chocolate chips, you can use chopped chocolate or even chocolate shavings.
  • Be careful not to overmix the dough. Overmixing will make the cookies tough.
  • If you want chewier cookies, chill the dough for at least 30 minutes before baking.
  • For crispier cookies, bake them for a few minutes longer.
  • The cookies are best enjoyed fresh out of the oven, but they can also be stored in an airtight container at room temperature for up to 3 days.

Conclusion:

Chocolate cracker cookies are a delicious and easy-to-make treat that is perfect for any occasion. They are made with just a few simple ingredients, and they can be customized to your liking. Whether you like them chewy or crispy, these cookies are sure to be a hit.
