CHOCOLATE-COVERED GINGERBREAD CAKE

Chocolate-Covered Gingerbread Cake image

So many German settlers carried their gingerbread treats to small towns around this country that the sweetly spiced cakes and cookies have become an all-American tradition. Coated with a chocolate ganache glaze, the homey cake of holidays past is transformed into a special-occasion dessert. This cake can be made vegan by using non-dairy margarine instead of butter and Rich's Whip instead of real whipping cream and ghiradelli semi-sweet chocolate chips with exceptional results. You can also add raspberries to the top. Recipe is from Bon Appetit, Dec. 2002.

Tips:

  • Use fresh gingerbread: Fresh gingerbread will give your cake the best flavor and texture. If you don't have fresh gingerbread, you can make your own using a gingerbread mix or recipe.
  • Don't overmix the batter: Overmixing the batter will make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake until a toothpick inserted into the center comes out clean: This will ensure that the cake is cooked through.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.
  • Use a good quality chocolate for the ganache: The quality of the chocolate will affect the taste of the ganache. Use a chocolate that you enjoy eating on its own.
  • Make sure the ganache is thick enough to coat the cake: If the ganache is too thin, it will run off the cake. If the ganache is too thick, it will be difficult to spread.
  • Be patient when decorating the cake: It takes time to decorate a cake neatly. Don't rush the process.
