3 cups chocolate chips, melted

Steps:

  • In a plastic bag, crush the graham crackers finely with the back of a large pot or pan.
  • In a large bowl, combine graham crackers, ¼ cup (30g) confectioners' sugar, salt, and melted butter, stirring until the mixture is the texture of wet sand.

Tips:

  • For a richer cheesecake flavor, use a mixture of cream cheese and mascarpone cheese.
  • If you don't have a springform pan, you can use a 9-inch round baking pan. Just be sure to line the pan with parchment paper so the cheesecake doesn't stick.
  • To make the chocolate coating, use a high-quality chocolate that contains at least 70% cocoa solids.
  • If you don't have a double boiler, you can melt the chocolate in a microwave-safe bowl. Just be sure to heat the chocolate in 30-second intervals, stirring in between, so it doesn't burn.
  • To decorate the cheesecake bites, you can use a variety of toppings, such as sprinkles, chopped nuts, or grated chocolate.
