Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
  • In large bowl, mix cookie mix, butter, egg and dry pudding mix with spoon until soft dough forms. Stir in chopped chocolates. Press evenly in pan.

1 (3.4 ounce) package cook-and-serve chocolate pudding mix
1 (8 ounce) container frozen whipped topping, thawed
12 chocolate sandwich cookies, broken into pieces
ice-pop molds

Steps:

  • Beat milk and pudding mix together with a wire whisk in a saucepan until powder is dissolved into liquid; bring to a full, rolling boil and remove immediately from heat. Let pudding cool slightly, about 10 minutes.

This is a family favorite recipe that my kids love in whatever variation we try. Even with the kids on their own, it's still the go-to recipe for a guaranteed sweet-tooth fix.

2 1/4 c flour
1 tsp baking soda
1 Tbsp fresh ground flax seed (optional)
1 c margarine or butter, softened
3/4 c brown sugar, firmly packed
1/4 c sugar
3.4 oz instant pudding mix (any flavor but vanilla or banana work well)
1 tsp vanilla
2 large eggs
12 oz chocolate chips (any flavor)
1 c nuts, chopped (optional)

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a bowl, combine flour, baking soda and fresh ground flax seed. Set aside.
  • 3. In a separate bowl, blend margarine, sugars (sugar substitutes can also be used), pudding mix, and vanilla; blend until creamy. Beat in eggs.
  • 4. Gradually stir in flour mixture until almost blended. Fold in chocolate chips and nuts just until combined. Do not over mix!
  • 5. Press dough into a 13x9 glass baking dish. Bake for 20-25 minutes until light golden brown and dough is set. Cool completely before serving.

1/4 c butter or margarine, melted
2 eggs

  • 1. Mix bread cubes and broken cookies in large bowl; set aside
  • 2. Blend milk, sugar, butter, eggs and vanilla extract; pour over bread mixture, stirring to coat evenly.
  • 3. Pour into greased 1 1/2-quart round casserole. Bake at 350 degrees F for 45 to 50 minutes or until set.
  • 4. Serve warm or at room temperature topped with whipped cream if desired.
