  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10 1/2x15 1/2-inch baking pan and line with waxed paper.

  • Bake cake mix according to package directions for two 9 inch round cakes. Let cool, and remove from pans.
  • Remove ice cream from the freezer and let it partially thaw (you don't want it to be melted, but it does need to be spreadable).
  • On a freezer-safe plate, place one 9 inch cake. Measure a piece of wax paper, folded in half, to go around the circumference of the cake and secure in place with tape (this will help the cake keep it shape until you're ready to serve). On top of the cake, evenly spread ice cream to the edges, pressing it up against the wax paper.
  • Crumble two-thirds of the package of cookies, and sprinkle evenly over the ice cream. Place the second 9 inch cake on top of the cookie crumbs, and press down gently (don't push too hard, or your wax paper may come undone).

Fold plastic wrap over ice cream to enclose. Freeze 3 hours or overnight until firm. Remove ice cream from pan, still wrapped in plastic; place on oven tray. Return to freezer. Preheat oven to 300°F. Grease both cake pans. Beat butter, extract and sugars in small bowl with electric mixer until light and fluffy. Add egg; beat until combined. Transfer mixture to large bowl; stir in sifted flours, then chocolate bits. Divide dough in half; press one half over base of one pan. Press remaining half over base of second pan, leaving a 1/4 to 1/2 inch gap around edge of dough; push chocolate Melts onto top of dough. Bake cookies about 20 minutes. Stand cookies in pans 20 minutes before turning, top-side up, onto wire racks to cool. Place plain cookie on cake board; top with ice-cream cake then chocolate-topped cookie. Serve immediately. Ice-cream cake and cookies can be prepared one day ahead. Store cookies in an airtight container. Use a serrated knife to cut the cake.

This is a Christmas tradition in my family. We often have to make more than one and somehow ingredients tend to go missing in action. It is so easy, kids love to help (which explains the missing ingredients). To make cookie cake, double the recipe and place the cookies and cream in layers in a springform pan (topping with a layer of whipped cream). After refrigerating at least overnight, remove sides of pan and apply more whipped cream as icing.

1 (8 ounce) package chocolate wafer cookies
2 cups whipping cream
sugar
chocolate shavings, for decoration
1/3 cup no-sugar-added peanut butter (optional)

Steps:

  • Whip 1 1/2 c of cream add sugar to taste (1/4- 1/2 cup).
  • Put a teaspoonful of sweetened whipped cream on a cookie, top with another cookie.
  • Add another teaspoonful and another cookie.
  • Repeat.
  • Place on one end of a flat rectanglar serving dish (or plate), with the cookies vertical.
  • Put a teaspoonful of cream on a cookie and add it to the end.
  • Repeat until all the cookies and cream are used in a log shape.
  • Coat with remaining cream and cover lightly in plastic wrap.
  • Refrigerate at least overnight.
  • When ready to serve, whip remaining cream and sweeten.
  • Recoat the log with the whipped cream and decorate with chocolate shavings.
  • To serve, cut on the diagonal.
  • For darker frosting color, add 1/3 cup unsweetened peanut butter to whipped cream mixture.

1/3 c brown sugar
2 Tbsp brown sugar
1 c white sugar
1 c unsalted butter (room temperature)
1 Tbsp fresh honey
2 eggs (room temperature)
1 tsp vanilla
1/2 c cocoa
3/4 tsp salt
1 tsp baking soda
2 1/4 c all purpose flour
2 c milk chocolate chips
3/4 c shredded coconut
1 c chopped pecans

Steps:

  • 1. Preheat your oven to 325 degrees. Place chopped pecans on cookie sheet and toast 8 minutes until it turns a golden brown in color, turning once after five minutes. After toasted, set the pecans aside and let them cool.
  • 2. Mix brown and white sugars together in bowl, add butter & mix until smooth. Slowly add honey, eggs, and vanilla until all ingredients are combined.
  • 3. In separate bowl sift together AP Flour, cocoa, salt, and baking soda. Add your chocolate chips, 1/2 cup toasted pecans and coconut to the dry mix . Add to the wet and mix until combined.
  • 4. Scoop out cookies of desired size onto parchment lined cookie sheet. (I normally use a 1 1/2" scoop). Top each cookie with a few chopped pecans. Bake 10-12 minutes, rotating pan after 6 minutes.

1/2 gallon cookies and cream ice cream, softened
1 cup heavy cream
1 (12-ounce) bag semisweet chocolate morsels
Butter, for pans
Flour, for pans
1 (18.25-ounce) box devil's food cake mix
1 1/2 cups water
1/2 cup vegetable oil
3 eggs

Steps:

  • Line 1 (9-inch) cake pan with plastic wrap, with 3 inches overhanging. Spread softened ice cream into lined pan in a smooth, even layer. Freeze for 3 hours, or until frozen solid.
  • Preheat oven to 350 degrees F.
  • Butter and flour 2 (10-inch) round cake pans and set aside. In a stand mixer or with a hand mixer, beat cake mix, water, oil and eggs in a large mixing bowl on medium speed for 2 minutes, or until well blended. Using a spatula, divide batter between the 2 prepared cake pans. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool in pans on a wire rack for 15 minutes. Run a knife around the edge of each pan to loosen cakes and remove from pans.
  • While cakes are cooling, heat heavy cream in a small heavy saucepan over medium heat until bubbling around the edges. Remove pan from heat, add chocolate morsels, and stir with a whisk until smooth. Refrigerate for about 30 minutes, until cool and slightly thickened, stirring occasionally. Spread ganache on top of and around sides of both cake layers, keeping layers separate and not fitting together yet. Refrigerate entire cake for 1 hour, or until ganache is set.
  • Place 1 cake layer, ganache side up, on a serving platter. Remove ice cream from pan, peel off plastic wrap, and place on top of cake layer. Place second cake layer on top of ice cream, ganache side up. Freeze until ready to serve, but let stand at room temperature 5 minutes before seving.
