1 3/4 cups Gold Medal™ all-purpose flour
1/2 cup powdered sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 cup cold butter
1 cup miniature semisweet chocolate chips
1 teaspoon vanilla
1/2 cup powdered sugar
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 400°F. In large bowl, mix flour, 1/2 cup powdered sugar, 1 1/2 teaspoons cinnamon and the salt. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. Stir in chocolate chips and vanilla (mixture will be crumbly).
  • Using hands, shape dough into 1-inch balls. On ungreased cookie sheets, place balls 1 inch apart.
  • Bake 6 to 8 minutes or until set but not brown. Immediately remove from cookie sheets to cooling racks. Cool slightly, about 20 minutes.
  • In small bowl, stir together 1/2 cup powdered sugar and 1 teaspoon cinnamon. Roll cookies in sugar mixture, shaking off excess back into bowl. Cool completely, about 30 minutes.

1/2 cup evaporated milk or 1/2 cup milk
1 teaspoon vanilla
1/2 cup peanut butter (I use crunchy PB)
3 cups oatmeal (quick cooking)

Steps:

  • Combine butter, cocoa, sugar, and milk in a large saucepan.
  • Bring to a full boil, reduce heat and simmer for one minute stirring constantly.
  • Add vanilla and peanut butter mixing well.
  • Stir in oats.
  • Quickly drop onto waxed paper by the spoonful or desired amount.
  • Let cool and enjoy.
  • Do not under or over cook ingredients in saucepan. Once oats are stirred in drop onto wax paper immediately. I do not suggest in double batching this particular recipe.
