These will seem soft when you remove them from the oven, but they will stiffen as they cool. Ms. Luchetti recommends Ghirardelli 60 percent chocolate chips or Guittard Extra Dark, and likes Valrhona cocoa powder.

Categories     Chocolate

Time 2h25m

Number Of Ingredients 6

2 large egg whites, room temperature
1/2 tsp cream of tartar
2/3 c superfine granulated sugar
1 tsp vanilla extract
1 c semisweet chocolate chips or finely chopped semisweet chocolate
1 c finely chopped walnuts

Steps:

  • 1. Preheat oven to 350 .
  • 2. Line 2 baking sheets with parchment paper. Set aside.
  • 3. In the bowl of an electric mixer, beat egg whites until foamy.
  • 4. Add the cream of tartar and beat until fluffy but not at all dry. (Be careful not to over beat.)
  • 5. Add the sugar gradually, about 3 tablespoons at a time
  • 6. When 1/2 of the sugar has been added, add the vanilla extract.
  • 7. Continue beating and adding remaining sugar in batches, until all of the sugar is dissolved and the meringue is very shiny and tight.
  • 8. Gently fold in the chocolate chips and chopped nuts.
  • 9. Working one teaspoon at a time, push a teaspoon of meringue from the tip of 1 teaspoon with the back of another teaspoon onto the lined baking sheets, leaving 1-inch of space between cookies.
  • 10. Place baking sheets in the preheated oven and turn the oven off.
  • 11. Leave the cookies (undisturbed) in the oven for at least 2 hours and up to overnight, or until cookies are crisp and dry.

Tips:

  • Use high-quality chocolate chips for the best flavor. Semi-sweet or bittersweet chocolate chips are good choices.
  • If you don't have a kitchen scale, you can use measuring cups. Just be sure to level off the ingredients before measuring.
  • Don't overbeat the egg whites. Overbeaten egg whites will make the cookies tough.
  • Bake the cookies until they are set but still soft in the center. Overbaked cookies will be dry and crumbly.
  • Let the cookies cool completely before storing them. This will help them keep their shape.

Conclusion:

Chocolate chip meringue cookies are a delicious and easy-to-make treat. They're perfect for any occasion, and they're sure to be a hit with everyone who tries them. So next time you're looking for a sweet snack, give these cookies a try. You won't be disappointed.
