Indulge in a symphony of flavors with this delectable Chocolate Caramel Pecan Crunch, a confection that tantalizes the taste buds with its irresistible combination of rich chocolate, gooey caramel, and crunchy pecans. This extraordinary treat features a buttery shortbread crust that provides a sturdy foundation for layers of luscious caramel and decadent chocolate ganache. Topped with a generous sprinkling of caramelized pecans, this dessert offers a delightful textural contrast that complements the smooth and velvety fillings.

The journey to create this masterpiece begins with the preparation of the shortbread crust, a simple yet essential component that forms the base of the dessert. A mixture of flour, sugar, butter, and a hint of salt is pressed into a compact and crumbly dough, then baked until golden brown. As the crust cools, the caramel layer takes center stage. A combination of sugar, butter, corn syrup, and heavy cream is heated until it reaches the perfect consistency, achieving that irresistible gooeyness that is synonymous with caramel.

Once the caramel has been poured onto the cooled crust, it's time to introduce the chocolate ganache, a rich and decadent mixture that adds a touch of sophistication to the dessert. Chocolate, heavy cream, and butter are melted together until smooth and velvety, then poured over the caramel layer. As the ganache cools, it sets, creating a firm yet creamy layer that perfectly complements the caramel beneath.

The final touch that elevates this dessert to new heights is the caramelized pecans, a delightful topping that adds both texture and flavor. Pecan halves are coated in a mixture of sugar and butter, then roasted until they reach a golden brown hue, exuding a delightful crunch and a nutty aroma. These caramelized pecans are liberally sprinkled over the chocolate ganache, adding a touch of rustic charm to the dessert.

Overall, the Chocolate Caramel Pecan Crunch is a delightful treat that combines classic flavors and textures to create an unforgettable dessert experience. Its combination of buttery shortbread, gooey caramel, decadent chocolate, and crunchy pecans ensures that every bite is a journey through a symphony of flavors.

Provided by Ree Drummond : Food Network

Categories     dessert

Time 1h45m

Yield 24 pretzel turtles

Number Of Ingredients 4

24 pecan halves
24 mini pretzel twists
24 individually wrapped soft caramel squares
8 ounces good-quality milk chocolate, melted

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the pecan halves on a baking sheet in a single layer and bake, shaking the sheet once halfway through, until lightly toasted, 5 to 6 minutes. Transfer the nuts to a plate to cool.
  • Line the baking sheet with parchment paper or a silicone baking mat. Arrange the pretzels neatly on the baking sheet, then top each pretzel with an unwrapped caramel. Bake until the caramels soften (but are definitely not melting), 4 to 5 minutes. Remove the baking sheet from the oven and gently press a pecan half onto each caramel, just enough for the caramel to fill the pretzel. Set aside to cool completely.
  • Remove the cooled pretzel/caramels from the baking sheet. Spoon 24 small dollops (1 1/2-teaspoon helpings) of the melted chocolate all over the baking sheet, then lightly drop a pretzel onto the middle of each dollop, making sure the pretzel is centered. Allow them to cool completely before serving (you can hasten this along in the fridge).

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes 2 to 3 dozen pieces

Number Of Ingredients 6

1/2 pound (2 sticks) unsalted butter, room temperature, plus more for pan
1/3 cup water
1 cup sugar
2 cups chopped pecans, plus more halves (optional) for top
8 ounces semisweet chocolate (optional)
2 tablespoons light corn syrup (optional)

Steps:

  • Butter a 9-inch square baking pan, and line the bottom with a piece of parchment paper that extends up and over two sides. Butter the parchment, and set the pan aside.
  • Place the butter and water in a large saucepan. Cook over medium-high heat until the butter is melted. Add the sugar, and stir constantly until dissolved and the mixture comes to a boil. Using a pastry brush dipped in water, brush away any sugar crystals on the side of the pan to prevent recrystallization. Cook until the mixture is dark amber in color. Remove from heat, and stir in the pecans. Pour into the prepared baking pan, and let stand at room temperature to cool completely.
  • Place the chocolate and corn syrup, if using, in a small heat-proof bowl set over a pan of barely simmering water. Stir occasionally until combined and completely melted. Let cool slightly, and spread over the top of the cooled toffee. Arrange the pecan halves on top, and let sit at room temperature until the chocolate has cooled completely and set, at least 2 hours or overnight. Carefully unmold by lifting out the parchment paper. Break or cut into pieces, and store in an airtight container at room temperature for up to 1 month.

Tips:

  • Use high-quality chocolate for the best flavor. A semisweet or bittersweet chocolate with a cocoa content of at least 60% is a good choice.
  • If you don't have a candy thermometer, you can test the caramel by dropping a small amount into a glass of cold water. If the caramel forms a hard ball, it is ready.
  • Be careful not to overcook the caramel. Overcooked caramel will be too hard and brittle.
  • Chop the pecans into small pieces so that they are evenly distributed throughout the chocolate caramel crunch.
  • Line the baking pan with parchment paper or a silicone baking mat for easy cleanup.
  • Let the chocolate caramel crunch cool completely before breaking it into pieces.

Conclusion:

This chocolate caramel pecan crunch is a delicious and easy-to-make treat that is perfect for any occasion. It is made with just a few simple ingredients and can be customized to your liking. You can use different types of chocolate, nuts, and even add in some dried fruit or spices. No matter how you make it, this chocolate caramel crunch is sure to be a hit!
