Time 5m

Number Of Ingredients 3

1 cup whole nuts (despite the pics)
1/4 cup sugar
1 tablespoon butter

Steps:

  • Add nuts, sugar, and butter to a large nonstick skillet and heat over medium heat. Stir constantly with a rubber heat-proof spatula until the sugar melts into the butter and completely coats the nuts, turning the heat down as needed, approximately 5-7 minutes.
  • Immediately transfer nuts to parchment paper and immediately separate using 2 forks OR let the nuts harden together and break them apart with your fingers once cooled. The nuts and coating will harden in 5-7 minutes. Chop the nuts if desired.

SALTED PEANUT AND CARAMEL MATZO BRITTLE

Salted Peanut and Caramel Matzo Brittle image

This is a more advanced version of the popular chocolate matzo toffee, but it's still easy to make: A layer of caramel bakes on top of then soaks into the unleavened bread, which next gets slathered with peanut butter and topped with crunchy peanuts. For those with peanut allergies - or those who do not eat peanuts at Passover - you can substitute any creamy nut butter and nuts. You can also use tahini and halvah; add snipped, dried apricots or dried cranberries for color; or keep it simple and stick with chocolate - preferably dark, to counter the caramel's sweetness - as in the original recipe by baker Marcy Goldman in her book "A Treasury of Jewish Holiday Baking" (Doubleday 1998). Be aware: This dish is addictive.

Time 30m

Yield 8 to 12 servings

Number Of Ingredients 6

4 square matzos
1 cup/227 grams unsalted butter, cut into 1-tablespoon pieces
1 cup/220 grams firmly packed dark brown sugar
1 cup/200 grams smooth peanut butter
3/4 cup/105 grams roasted, salted peanuts, coarsely chopped
1/2 teaspoon flaky sea salt

Steps:

  • Heat the oven to 375 degrees and line a rimmed 11-by-17 or 12-by-18-inch baking sheet with parchment paper, covering the pan and extending over the sides.
  • Lay 2 matzo squares in the pan, positioning the concave side up to best retain the caramel. Then, like a puzzle, fit the remaining matzo onto the baking sheet, carefully breaking pieces to fill the entire baking pan in one layer. (Don't worry if they are not perfect; the brittle will be cut up later.)
  • In a medium saucepan, melt the butter and brown sugar over medium heat, stirring constantly until the mixture comes to a boil, about 6 minutes. Boil just until very bubbly, another 2 to 3 minutes, then remove from heat and pour over the matzo, covering completely. Working quickly, spread the caramel using a heatproof spatula, then spoon it on top if it spills between the cracks in the matzo.
  • Place the baking sheet in the oven and reduce the temperature to 325 degrees. Bake for 10 to 12 minutes, checking to make sure the edges and top are not burning.
  • Once the matzo is almost done baking, heat the peanut butter in a microwave until slightly warmed and easily pourable, about 20 to 30 seconds on high.
  • Remove the matzo from the oven and drizzle the warmed peanut butter on top, then sprinkle with the peanuts, then the salt. Cool, break into pieces then transfer to a lidded container. Brittle is best - and at its snappiest - when chilled. Refrigerate it for at least 30 minutes or freeze for 15 until peanut butter firms up. Brittle will keep up to 1 month frozen; let it thaw for about 10 minutes before serving.

DEEP DARK CHOCOLATE CARAMELS

Deep Dark Chocolate Caramels image

The better the quality of chocolate used in these caramels, the more delicious the result. Caramels should be individually wrapped in cellophane or waxed paper the moment they are cut or they will absorb moisture from the air and begin to ooze.

Yield Makes about 150

Number Of Ingredients 7

4 cups heavy cream
2 1/2 cups light corn syrup
4 1/2 cups sugar
1/2 teaspoon salt
1 pound plus 2 ounces bittersweet chocolate, chopped in small pieces
1/2 pound (2 sticks) unsalted butter, cut into 16 pieces
Vegetable-oil cooking spray

Steps:

  • Spray an 11 3/4-by-16 1/4-inch baking pan with vegetable-oil spray. Set aside in a spot where it will not be moved. In a heavy 4-quart saucepan, combine 2 cups cream, corn syrup, sugar, and salt. Clip on candy thermometer. Bring to a boil over medium heat, stirring occasionally with a wooden spoon, 15 to 20 minutes. Wash down sides of pan with a pastry brush dipped in water to remove any sugar crystals.
  • Cook, stirring constantly, until temperature reaches 220 degrees, 6 to 8 minutes; watch so mixture doesn't boil over. Continue stirring, and add chocolate and butter; keep mixture boiling, and slowly add remaining 2 cups cream. Cook, still stirring, until temperature reaches 240 degrees (soft-ball stage), about 60 minutes, keeping mixture at a low boil.
  • Without scraping pot, pour mixture into prepared pan. Let stand uncovered at room temperature for 24 hours without moving.
  • To cut, spray a cutting board with vegetable-oil spray. Unmold caramel onto sprayed surface. Using a large knife, cut into 1-by-1 1/4-inch pieces or other shapes. Wrap each piece in cellophane or waxed paper.

Tips:

  • Fresh Ingredients: For the best flavor and texture, use fresh, high-quality ingredients. Fresh nuts, plump dried fruit, and creamy chocolate chips or chopped chocolate will make a big difference.
  • Combine Different Textures: A variety of textures adds interest and depth to the salad. Crunchy nuts, chewy dried fruit, soft chocolate, and crisp lettuce or greens all contribute to a satisfying eating experience.
  • Balance the Flavors: Aim for a balance of sweet, salty, and bitter flavors. The sweetness of the chocolate and dried fruit should be complemented by the saltiness of the nuts and the bitterness of the cacao powder or dark chocolate.
  • Use High-Quality Chocolate: The quality of the chocolate you use will greatly impact the flavor of the salad. Use a good-quality semisweet or bittersweet chocolate, or a combination of both.
  • Don't Overdress the Salad: A little dressing goes a long way. Too much dressing can weigh down the salad and make it soggy.

Conclusion:

A chocolate caramel nut salad is a delicious and versatile dish that can be enjoyed as a snack, dessert, or even a light meal. With its combination of sweet, salty, and crunchy textures, it's sure to please a variety of palates. By following the tips above, you can create a salad that is both flavorful and visually appealing. Experiment with different combinations of nuts, dried fruit, and chocolate to find your perfect match.
