Yield Makes one 9" pie

Number Of Ingredients 15

For the Crust
2 tsp. granulated sugar
1/2 tsp. kosher salt
1 1/4 cups all-purpose flour, plus more for dusting
1/2 cup (1 stick) unsalted butter, cut into pieces, frozen for 15 minutes
For the Filling and Assembly
3 cups blanched hazelnuts
4 oz. bittersweet chocolate, chopped
6 Tbsp. unsalted butter
1 cup (packed) light brown sugar
1 Tbsp. instant espresso powder
1 Tbsp. vanilla extract
1 cup plus 2 Tbsp. light corn syrup
1 tsp. kosher salt, divided
3 large eggs, room temperature, beaten to blend

Steps:

  • For the Crust
  • Pulse granulated sugar, salt, and 1 1/4 cups flour in a food processor to combine. Add butter and pulse until coarse, pea-size crumbs form, about 10 seconds. With the motor running, add 2 Tbsp. ice water and process until dough just holds together, about 30 seconds. Squeeze a small amount of dough between your fingers: If it's very crumbly, pulse in more ice water 1 Tbsp. at a time (2 Tbsp. maximum). Do not overprocess.
  • Turn out dough onto a lightly floured surface and push together into a ball. Knead a few times to combine, then flatten into a disk with smooth edges (no cracks). Cover tightly and chill at least 1 hour.
  • Roll out dough to a 13" round on a lightly floured surface. Roll dough loosely around rolling pin and transfer to a standard 9"-diameter pie dish. Lightly press dough into pan, leaving a 1" overhang; trim excess. Fold overhang under and crimp as desired. Chill until cold, about 30 minutes.
  • Do Ahead: Dough can be made and shaped into disk 3 days ahead. Keep chilled, or freeze up to 3 months. Thaw before rolling.
  • For the Filling and Assembly
  • Place racks in bottom third and center of oven; preheat to 375°F. Place a rimmed baking sheet on bottom rack to preheat.
  • Spread hazelnuts on another rimmed baking sheet and bake on center rack until light golden brown, about 10 minutes. Reserve 1 cup whole hazelnuts to decorate pie; finely chop remaining hazelnuts.
  • Melt chocolate in a small heatproof bowl set over a small saucepan of barely simmering water (do not let water touch bowl); stir constantly until chocolate is melted and smooth. (You can also do this in a microwave.) Remove from heat and let cool slightly. Spread chocolate in bottom of pie shell with the back of a spoon and chill until set, about 15 minutes.
  • Melt butter in a small skillet over medium heat or in a microwave in a microwave-safe bowl. Pour butter into a large bowl. Whisk in brown sugar, espresso powder, vanilla, 1 cup corn syrup, and 3/4 tsp. salt until well incorporated. Whisk in eggs, then fold in chopped hazelnuts.
  • Pour filling into pie crust (do not overfill). Toss whole hazelnuts with remaining 2 Tbsp. corn syrup and 1/4 tsp. salt in a small bowl and arrange on top of pie. Place pie dish on preheated baking sheet on bottom rack and bake 20 minutes. Rotate baking sheet, move to center rack, and continue to bake, covering edges with foil or a pie shield if crust starts to brown too much, until crust is golden brown and filling is almost set with a slight jiggle in center of pie, 20-25 minutes more. Transfer pie to a wire rack and let cool before slicing, about 3 hours.
  • Do Ahead: Filling (before decorating) can be made 1 day ahead. Bring to room temperature before baking. Pie can be made 2 days ahead. Cover loosely with foil and store at room temperature.

CHOCOLATE CARAMEL HAZELNUT PIE

Chocolate Caramel Hazelnut Pie image

I found this recipe in a charming cookbook called the Artful Pie, Maria Cunningham painted a picture of the Chocolate Caramel Hazelnut Pie in Lisa Cherkasky's book. It is as beautiful as it is delicious. If you cannot find hazelnuts, you could use another type of nut - almond, walnut, pecan.

Time 1h15m

Number Of Ingredients 7

1 prebaked 9-inch pie shell
1 1/2 cups sugar
1/2 cup water
1/2 cup unsalted butter (cut into pieces)
5 ounce evaporated milk
2 ounces unsweetened chocolate (coarsely chopped)
2 cups hazelnuts (skinned and coarsely chopped)

Steps:

  • To remove brown paper skin of hazelnuts, first toast them in a 400° oven for 5 to 6 minutes. Let them cool and then roll them in a kitchen towel. Don't worry about getting every last bit of the skin off the nuts, only what is loose. Strain out the skins, chop the nuts coarsely.
  • Prepare the pie shell, add foil and pie weights and blind bake at 375 ° for 7-8 minutes, just until the pie pastry is set. Do not let the pastry brown at all. Let cool.
  • In a large heavy-bottomed saucepan, stir together the sugar and water. Set the saucepan over medium-high heat. DO NOT STIR THE SUGAR!!!! Let the sugar come to a boil and continue to cook until it is a golden brown. If it browns unevenly, you can move it around by swirling it in the pan. When the sugar is a rich golden brown, remove it from the heat, stand back and add the butter. Stir it in with a wooden spoon, then the evaporated milk until smooth. Let cool for 5 minutes and stir in the chocolate. Set the filling aside to cool for 10 to 15 minutes and then stir in the nuts Meanwhile preheat the oven to 450°.
  • Pour the filling into the pie shell and bake for 10 minutes or until the edge is very brown and the center is bubbling.

Chocolate, hazelnut & salted caramel tart image

A buttery pastry case with a layer of caramel and just a hint of salt, studded with nuts and finished with a fudge filling

Provided by Good Food team

Categories     Afternoon tea, Dessert

Time 1h30m

Number Of Ingredients 17

50g blanched hazelnut
200g plain flour
1 tbsp icing sugar
140g cold butter , diced
1 egg yolk
flour , for dusting
75g caster sugar
25g butter
100ml double cream
1 tbsp golden syrup
large pinch sea salt flakes
50g blanched hazelnut , toasted and roughly chopped
100g dark chocolate (70%)
75g butter
2 large eggs , plus 1 yolk
50g caster sugar
1 tbsp cocoa

Steps:

  • To make the pastry, whizz the hazelnuts in a food processor until finely ground. Add the flour, icing sugar and butter, and pulse until the mixture resembles breadcrumbs. Add the egg yolk and 1-2 tbsp cold water, and pulse until the dough comes together. Tip the dough out and flatten into a disc, then wrap in cling film and chill for 30 mins.
  • Heat oven to 180C/160C fan/gas 4. On a floured surface, roll out the pastry to line a 23cm loose-bottomed, deep tart tin. Trim the edges and prick the base with a fork, then line with baking parchment and fill with baking beans. Bake for 20 mins, then carefully remove the baking beans and parchment and bake for a further 5-10 mins until light golden. Allow to cool.
  • Meanwhile, make the salted caramel. Tip the sugar into a small pan, add 1-2 tbsp water and heat gently to dissolve the sugar. Increase the heat and cook until the sugar turns to an ambercoloured caramel. Reduce the heat and add the butter, cream and golden syrup, and stir until the sauce is smooth and thickened. Remove from the heat and add the salt. Allow to cool for a few mins, then spread onto the tart base. Scatter with chopped hazelnuts and set aside.
  • For the chocolate filling, melt the chocolate and butter in a heatproof bowl set over a pan of simmering water. Stir until smooth, then remove from the heat and allow to cool slightly. In a separate bowl, whisk the eggs, egg yolk and caster sugar for about 6 mins until thick and pale. Fold in the melted chocolate and cocoa, then pour into the tart case. Transfer to a baking sheet and cook for 20-25 mins or until set and the top has formed a crust. Allow to cool to room temperature before serving in slices.

SALTED CARAMEL & HAZELNUT BANOFFEE PIE

Salted caramel & hazelnut banoffee pie image

Try a new take on banoffee pie with a crunchy hazelnut praline, salted caramel and muscovado whipped cream. A few cheat's ingredients will save you time

Provided by Esther Clark

Categories     Dessert

Time 55m

Number Of Ingredients 9

100g hazelnuts
4 tbsp caster sugar
300g chocolate oat biscuits
85g salted butter, melted
400g dulche de leche
300ml double cream
3 tbsp dark muscovado sugar
1 tsp vanilla bean paste, or 1 tsp vanilla extract
3 medium bananas, peeled and sliced

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the hazelnuts onto a baking sheet, and toast in the oven for 10-15 mins until evenly golden. Tip into a bowl. Line the baking sheet with baking parchment and set aside.
  • Tip the caster sugar, half the toasted hazelnuts and a small pinch of sea salt into a small saucepan set over a low heat. Cook gently for 7-10 mins until the sugar melts and turns an amber colour - do not stir, but swirl the pan every now and again. Tip the mix onto the baking sheet. Leave to cool completely, then break up into small pieces.
  • Line the base of a 23cm fluted tart tin with baking parchment. Break the biscuits into a food processor, and blitz with the rest of the hazelnuts to a fine crumb. Or, seal the biscuits and nuts in a food bag and crush with a rolling pin. Tip the crumbs into a bowl and combine with the melted butter. Press into the base of the tin and up the side, then chill for 2 hrs.
  • Remove the cold tart base from the tin (if it sticks slightly, put it in a warm oven for 3-4 mins to help release it), then set on a serving plate. Spoon the dulche de leche into a bowl and gently fold in a large pinch of sea salt (don't overmix, or it will become too loose).
  • Tip the cream, muscovado sugar and vanilla into another bowl and gently beat with an electric whisk until softly whipped. Spread the salted caramel over the base of the tart, then arrange the banana slices on top. Spoon over the muscovado cream. Chill for at least 3 hrs, or overnight. Scatter with the hazelnut praline just before serving.

Tips:

  • Mise en place: Before you start baking, measure and gather all of your ingredients and equipment. This will help you stay organized and ensure that you don't miss anything.
  • Use high-quality chocolate: The quality of your chocolate will make a big difference in the final flavor of your pie. Use a high-quality semisweet or bittersweet chocolate that contains at least 70% cacao.
  • Don't overmix the batter: Overmixing the batter can result in a tough, dense pie crust. Mix just until the ingredients are combined.
  • Blind bake the pie crust: Blind baking the pie crust before filling it will help to prevent it from becoming soggy. To blind bake the crust, preheat your oven to 350°F (175°C) and bake the crust for 10-12 minutes, or until it is golden brown.
  • Let the pie cool completely before serving: This will allow the filling to set and the flavors to meld together.

Conclusion:

This chocolate caramel hazelnut pie is a delicious and decadent dessert that is perfect for any occasion. The combination of chocolate, caramel, and hazelnuts is simply irresistible. With its rich, creamy filling and flaky crust, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this chocolate caramel hazelnut pie a try. You won't be disappointed.
