14 ounces caramels
½ cup evaporated milk
1 (18.25 ounce) package German chocolate cake mix
⅓ cup evaporated milk
¾ cup butter, melted
¼ cup chopped pecans
2 cups milk chocolate chips

Steps:

  • Peel caramels and place in a microwave-safe bowl. Stir in 1/2 cup evaporated milk. Heat and stir until all caramels are melted.
  • Preheat oven to 350 degrees F (175 degrees C) Grease a 9x13 inch pan.
  • In a large mixing bowl, mix together cake mix, 1/3 cup evaporated milk, melted butter, and chopped pecans. Place 1/2 of the batter in prepared baking pan.
  • Bake for 8 minutes.
  • Place the remaining batter into the fridge. Remove brownies from oven and sprinkle chocolate chips on top. Drizzle caramel sauce over chocolate chips. Remove brownie mix from refrigerator. Using a teaspoon, make small balls with the batter and smash flat. Very carefully, place on top of the caramel sauce until the top is completely covered.
  • Bake for an additional 20 minutes. Remove and let cool.

1 package (14 oz) caramels, unwrapped
1/2 cup evaporated milk
1 cup butter
2 cups sugar
2 teaspoons vanilla
4 eggs, slightly beaten
1 1/4 cups Gold Medal™ all-purpose flour
3/4 cup unsweetened baking cocoa
1/4 teaspoon salt
1 package (11.5 or 12 oz) semisweet chocolate chunks (2 cups)
1 1/2 cups chopped pecans
1 teaspoon oil

Steps:

  • Heat oven to 350°F. Grease 13x9-inch pan. In small saucepan, cook caramels and milk over low heat until caramels are melted and smooth, stirring frequently.
  • In medium saucepan, melt butter over low heat. Remove from heat. Stir in sugar, vanilla and eggs. Stir in flour, cocoa and salt until well blended. Stir in 1 1/2 cups of the chocolate chunks and 1 cup of the pecans. Spoon and spread batter in pan.
  • Gently and evenly drizzle caramel filling over batter to prevent large pockets of caramel and to prevent caramel from reaching bottom of bars. (Caramel can cover entire surface of batter.)
  • Bake 35 to 40 minutes or until set.
  • In small saucepan, melt remaining 1/2 cup chocolate chunks with oil over low heat, stirring until smooth. Drizzle over warm brownies. Sprinkle with remaining 1/2 cup pecans; press in lightly. Cool 20 minutes. Refrigerate 1 hour 30 minutes or until chocolate is set. Cut into squares. If refrigerated longer, let stand at room temperature for 20 minutes before serving.

I've tweaked this recipe from Canadian Living's Best Muffins & More cookbook, and now it's at the point where my family and friends have declared me the Goddess of Brownies. One friend even told me these brownies were better than sex. Seriously, they're that good.

1 cup butter, cubed
4 ounces unsweetened chocolate, chopped
1 3/4 cups granulated sugar
4 eggs, beaten
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 cup whipped cream
1 cup packed brown sugar
1/2 cup butter
1 1/2 cups mini chocolate chips (optional)

Steps:

  • Preheat oven to 400F (200C).
  • Take two saucepans of roughly equal size. Fill the smaller one about halfway with water. Put the other one on top. Put them on a burner and turn it to just below boiling. You could also use a double boiler.
  • Melt butter and chocolate together in the saucepan, and remove saucepans from heat. Dump out the water from the bottom one and dry it out.
  • Stir the granulated sugar into the chocolate mixture until it's mixed nicely. Slowly add the eggs and the vanilla. Next, stir in the flour and salt.
  • Pour the mixture into a greased 9x13 inch cake pan and bake for 12 minutes. (The batter won't be cooked through).
  • Meanwhile, in the bottom saucepan, boil the cream, brown sugar, and butter for 3 minutes.
  • Drizzle the brownies with the sugar mixture. Do this slowly or it'll go through the surface of the brownie.
  • Bake the brownies for another 8-10 minutes. They should be golden, not browned.
  • Sprinkle the brownies with the mini chocolate chips (if using,) give them a moment to melt, and then swirl them with the knife.
  • Enjoy!

1/4 cup chocolate milk
1/4 cup canola oil

30 caramels (recommended: Kraft)
2 cups shredded coconut, toasted

Steps:

  • Preheat the oven to 350 degrees F. Generously spray a 9 by 13-inch baking dish with cooking spray.
  • In a large bowl, beat the brownie mix with the eggs, chocolate milk, and oil until just combined. Using a spatula, fold in 1/2 cup chocolate chips. Spread into the prepared baking dish and bake until center is barely set, 25 to 30 minutes. Remove from the oven and cool completely.

2 cups sugar
4 eggs

1 (12 ounce) package semi-sweet semisweet chocolate chunks, divided

Steps:

  • Preheat oven to 350 degrees Farenheit and line a 13x9 baking pan with foil, spray the foil with cooking spray.
  • (Cut the foil long enough so that you can fold the ends over the edge of the pan on each end) In a large, microwave-safe bowl, microwave chocolate squares and butter on High until melted (2 minutes) Stir in sugar, blend well.
  • Add the eggs, blend well.
  • Stir in flour, blend well.
  • Spread half of the mixture in the baking pan and bake for 25 minutes or until the brownies are firm.
  • Don't turn the oven off yet!
  • While they are baking, get out another microwave-safe bowl; throw in the caramels and pour in the cream.
  • Microwave on high for about 2 minutes, the caramels should be partially melted.
  • Stir to help them melt completely.
  • Stir in 1 cup of the pecans and carefully spread the mixture over the baked brownies.
  • Sprinkle 1/2 of the chocolate chunks over the caramel and pour the remaining brownie batter on top, evening it out if needed.
  • It's ok if some of the caramel is showing.
  • Sprinkle the rest of the chocolate chunks on top and then the rest of the pecans.
  • Bake for another 30 minutes or until the brownies are firm.
  • Let the brownies cool in the pan on a wire rack and then lift them out with the foil and set them on a cutting board to cut them up.
  • These would make a decadent gift for someone who loves the flavor combination!

Nonstick baking spray
5 ounces unsweetened chocolate, finely chopped
2 ounces bittersweet chocolate, finely chopped
12 tablespoons (6 ounces, 1 1/2 sticks) unsalted butter, cut into small pieces
2 large eggs, room temperature
1 large egg yolk, room temperature
3/4 cup (5 ounces) superfine sugar
3/4 cup (4 1/2 ounces) firmly packed light brown sugar
1 teaspoon pure vanilla extract
3/4 cup (3 1/4 ounces) all-purpose flour
3 tablespoons natural cocoa powder
1/4 teaspoon kosher or fine-grained sea salt
Caramel
1 recipe Classic Caramel Sauce , chilled
Bittersweet Chocolate Ganache Topping
4 ounces bittersweet chocolate (64 to 72% cacao content), finely chopped
1/2 cup heavy whipping cream
Special Equipment
1 (8-inch) square baking pan

Steps:

  • Brownies: Position a rack in the center of the oven and preheat to 350 degrees F. Line the baking pan with aluminum foil, letting it hang about two inches over the sides. Coat the inside of the foil with nonstick baking spray.
  • Place both chocolates and the butter together in the top of a double boiler over low heat. Stir often with a rubber spatula to help melt evenly. Remove the top pan of the double boiler and wipe the bottom and sides dry. Or place the chocolates and butter in a microwave-safe bowl and melt on low power for 30-second bursts. Stir with a rubber spatula after each burst to make sure it's melting. Let the mixture cool while mixing the rest of the brownie batter. Stir with a rubber spatula occasionally to prevent a skin from forming on top.
  • Whip the eggs and egg yolk in the bowl of an electric stand mixer using the wire whip attachment, or in a large bowl using a hand-held mixer, until frothy, about 1 minute.
  • Add the sugars to the eggs and whip together until the mixture is very thick and pale colored and holds a slowly dissolving ribbon as the beater is lifted, about 5 minutes. Add the vanilla and stir to blend well.
  • Add the chocolate mixture to the egg mixture and blend completely on low speed. Stop and scrape down the sides and bottom of the bowl with the rubber spatula. The mixture will be smooth and dark chocolate colored.
  • In a medium bowl, sift the flour and cocoa powder together. Add the salt and stir to combine.
  • In 3 stages, add the dry ingredients to the chocolate mixture, blending well after each addition. Stop and scrape down the sides and bottom of the bowl with a rubber spatula to help mix evenly.
  • Pour the batter into the prepared pan and use a rubber spatula to spread it evenly. Bake for 35 minutes, or until a cake tester inserted in the center comes out with slightly moist crumbs clinging to it. Remove the pan from the oven and cool completely on a rack.
  • Caramel:
  • Stir the caramel sauce until it is smooth. Pour it onto the top of the cooled brownies and spread evenly into the corners using a small offset spatula. Chill in the freezer for 30 minutes to set the caramel.
  • Bittersweet Chocolate Ganache Topping:
  • Place the chocolate in a medium bowl. Heat the cream in a small saucepan until bubbles for around the edges. Pour the cream over the chocolate and let stand for 30 seconds. Stir the cream and chocolate together with a heat-resistant spatula until completely melted and smooth.
  • Remove the pan of brownies from the freezer. Pour the ganache over the caramel layer and spread it out evenly into the corners using a small offset spatula. Chill the brownies in the refrigerator for about 20 minutes to set the ganache.
  • Lift the brownies from the pan using the edges of the aluminum foil then peel away from the brownies. Use a large knife to cut the brownies into 5 rows in each direction. Dip the knife in hot water and dry between cuts. Gently separate the brownies and serve at room temperature.

Brownies:

1/4 cup plus 1 teaspoon natural unsweetened cocoa powder
2 1/2 tablespoons all purpose flour
1/8 teaspoon salt
1/2 cup plus 1 tablespoon sugar
2 large eggs
1/2 teaspoon vanilla extract
White-chocolate caramel:
3 tablespoons water, divided
3/4 teaspoon unflavored gelatin
4 1/2 tablespoons sugar
Pinch of salt
6 tablespoons heavy whipping cream
4 ounces high-quality white chocolate (such as Lindt or Perugina), finely chopped
1 1/2 tablespoons unsalted butter, diced, room temperature
Bittersweet-chocolate ganache:
2/3 cup heavy whipping cream
6 ounces bittersweet chocolate (54% to 60% cacao), chopped

Steps:

  • For candied pecans:
  • Lightly butter baking sheet. Stir sugar and 1/4 cup water in large nonstick skillet over medium heat until sugar dissolves. Increase heat and boil until sugar syrup is light golden, occasionally brushing down sides of skillet with wet pastry brush, about 8 minutes. Add pecans and stir until syrup coats pecans, about 1 minute. Immediately pour pecans out onto prepared baking sheet; spread in single layer with heatproof spatula. Cool completely. Coarsely chop nuts. DO AHEAD: Can be made 2 days ahead. Store airtight at room temperature.
  • For brownies:
  • Preheat oven to 350°F. Line 8x8x2-inch metal baking pan with foil. Butter foil. Combine 1/2 cup butter and bittersweet chocolate in heavy medium saucepan. Stir over medium-low heat until melted and smooth. Remove from heat; cool slightly. Whisk cocoa powder, flour, and salt in small bowl. Whisk sugar, eggs, and vanilla in medium bowl to blend. Pour butter mixture into sugar mixture; whisk until blended. Add cocoa mixture; whisk until blended. Transfer brownie batter to prepared baking pan; smooth top (layer will be thin).
  • Bake brownie until tester inserted into center comes out with moist crumbs attached, 18 to 20 minutes. Allow brownie to cool slightly, then gently press down on edges to form flat, even layer. Cool completely in pan on rack.
  • For white-chocolate caramel:
  • Spoon 1 tablespoon water into small bowl; sprinkle gelatin over and stir to blend. Let stand until gelatin softens, about 15 minutes.
  • Meanwhile, combine remaining 2 tablespoons water, sugar, and pinch of salt in heavy small saucepan. Stir over medium heat until sugar dissolves. Increase heat and boil until syrup is deep amber, occasionally swirling pan and brushing down sides with wet pastry brush, about 8 minutes. Slowly add cream (mixture will bubble vigorously). Reduce heat to low. Stir to dissolve any caramel bits. Remove from heat; let cool 5 minutes. Add gelatin mixture; stir until gelatin dissolves. Add white chocolate; whisk until melted and smooth. Whisk in butter. Pour caramel atop cooled brownie; spread evenly to cover completely. Chill uncovered until caramel firms slightly, at least 8 hours or overnight.
  • For bittersweet-chocolate ganache:
  • Bring cream to simmer in small saucepan. Remove from heat. Add chocolate; whisk until melted and smooth. Cool until mixture is slightly thickened but still pourable, about 15 minutes. Pour ganache atop caramel on brownie; spread just to edges. Sprinkle chopped candied pecans evenly over. Chill uncovered until ganache is firm enough to cut, about 4 hours. DO AHEAD: Can be made 2 days ahead. Cover and keep chilled.
  • Using foil as aid, lift brownie out of pan; place on work surface. Fold foil sides down. Using sharp knife, trim off about 1/4 inch of brownie on all sides. Cut brownie into eight 3 1/2-inch-long, 13/4-inch-wide bars. Place 1 brownie bar and scoop of Cacao Nib Gelato on each of 8 plates and serve.

This recipe was for my husband. He is a big fan of Salted Caramel Hot Chocolate, so I just had to bake something like this for the Rock Star of my life! You can drizzle even more caramel atop for a gooey treat!

1 c new jersey salted caramel, see recipe
3/4 c dark chocolate chips
2 oz unsweetened chocolate (2 1oz squares)
3 Tbsp special dark unsweetened cocoa powder
1 1/4 c sugar
3 eggs
1 stick butter
2 Tbsp vanilla
1/2 tsp salt
1 c flour
1/4 c dark chocolate chips
1 tsp large grain, coarse sugar
1/2 tsp kosher sea salt

Steps:

  • 2. In a double broiler, melt and whisk butter, chocolate squares, and 3/4 cup chips. Blend until even sauce.
  • 3. Stir in cocoa. Continue to whisk until thoroughly blended. Set aside.
  • 4. In a mixing bowl, beat sugar, vanilla, and eggs until frothy.
  • 5. Then add one tablespoon of chocolate mix at a time until eggs are tempered. Then dump into rest of chocolate and beat.
  • 6. Finally mix in sifted flour.
  • 7. Preheat oven to 350.
  • 8. In a square baking dish, line with parchment paper and spray with non-stick spray. Have extra paper on each side, so that you may later pull out brownies by hang off.
  • 9. Pour half your brownie mix into pan. Spread evenly all the way to corners.
  • 10. Pour half your caramel, in spoonfuls, in variously places.
  • 11. Pour the rest of the brownie batter atop and spread to corners.
  • 12. Top with rest of caramel. With a knife, swirl lightly the brownie and the caramel.
  • 13. Bake for 30-40 minutes or until a toothpick comes out without batter.
  • 14. Sprinkle 1/4c of chips atop.
  • 15. In a small bowl, mix kosher salt and coarse sugar. Sprinkle.
  • 16. Let brownies cool ambiently for 3 hours before removing from pan and cutting. Or place in refrigerator for 1.5 hours.

1-14oz pkg Kraft caramels
1-6oz pkg chocolate chips
1 pkg german chocolate cake mix
1 cup walnuts (chopped)
3/4 cup butter (melted)
5oz can evaporated milk

Steps:

  • Melt caramels in 1/3 cup evaporated milk and set aside. Mix remaining milk, 3/4 cup melted butter and cake mix together with 1 cup chopped walnuts. Divide mixture in half. 18.25-oz pkg german chocolate cake mix (15oz size cake mix is ok, if it's all you can find)
3/4 cup unsalted butter, melted
1 cup chopped nuts (i prefer hazelnuts, but you can use walnuts, pecans or almonds)
8-oz can evaporated milk, divided (2/3 cup + 1/3 cup)
1 (10-oz) pkg caramels (wrappers removed, if individually wrapped)
6-oz pkg chocolate chips, any kind (it's about 1 to 1 1/4 cups)

Steps:

  • 1. Preheat oven to 350ºF. Lightly butter or spray a 9x13 baking dish.
  • 2. In a medium size bowl, mix together the cake mix, butter, nuts, and 2/3 cup evaporated milk. Pour half of the batter into baking pan, and bake for 12 minutes.
  • 3. While base layer is baking, melt caramels in a heavy-duty saucepan, stirring frequently to prevent scorching. When caramels are melted, stir in remaining 1/3 cup evaporated milk; set aside.
  • 4. Remove cake from the oven (but don't let it cool). Immediately, while cake is still hot, sprinkle the chocolate chips in an even layer on top of the baked cake layer. Stir the milky caramel mixture so it's thin enough to pour. Then pour the caramel mixture on top, covering as much of chocolate chip layer as possible. Drop spoonfuls of the remaining cake batter on top of the caramel layer.
  • 5. Return baking dish to oven and bake for 26 to 30 more minutes, or until the top layer is baked and the chocolate chips have melted. Cool completely before cutting into 24 bars (6 vertical rows x 4 horizontal rows).
