CHOCOLATE BRIGADEIROS
Chewy, fudgy, addictive. These little chocolate fudge balls are as common and as loved in Brazil as cookies and brownies are in the United States. Traditionally, brigadeiros are a simple mixture of condensed milk, sweetened cocoa powder, and butter, cooked to a fudge state, then formed into little balls and rolled in chocolate sprinkles. I find this to be much too sweet, so I made a few changes to the original recipe, adding real chocolate, real cocoa powder, heavy cream, and corn syrup. Chocolate sprinkles are usually made with vegetable fat, so unless I know the sprinkle is made with real chocolate like the ones from Guittard or Cocoa Barry, I prefer to use cocoa powder, or grated chocolate, for rolling and the result is amazing. This is a perfect dessert to give as a gift for any occasion. Children will love it and so will adults.

- 1 In a medium heavy-bottomed saucepan, place the condensed milk, butter, heavy cream, and corn syrup and bring to a boil over medium heat.
- 2 When the mixture starts to bubble, add the chocolate and the cocoa powder. Whisk well, making sure there are no pockets of cocoa powder. Reduce the heat to low and cook, whisking constantly, until it is the consistency of a dense fudgy batter, 8 to 10 minutes. You want the mixture to bubble toward the end, so it's important to use low heat or the sides of the pan will burn the fudge. If you undercook it, the brigadeiro will be too soft; if you overcook it, it will be too chewy. It is done when you swirl the pan and the mixture slides as one soft piece, leaving a thick burnt residue on the bottom.
- 3 Slide the mixture into a bowl (without scraping the bottom) and let cool at room temperature. Cover the bowl with plastic wrap and chill in the refrigerator for at least 4 hours.
- 4 Scoop the mixture by the teaspoonful and, using your hands, roll each into a little ball about 3/4 inch in diameter (about the size of a chocolate truffle).
- 5 Place the sprinkles in a bowl. Roll 4 to 6 brigadeiros at a time through the sprinkles, making sure they cover the entire surface. Store in an airtight plastic container for 2 days or up to 1 month in the refrigerator.
CHOCOLATE BONBONS (BRIGADEIROS) - BRAZIL
This from "Cuisines of Portuguese Encounters", in which the author gives recipes she had during travelling thru Portugal and its former colonies. This is a Brazilian recipe, named for a famous Brazilian Air Force Commander in the 1940's. He was a chocoholic. Often served at birthday parties and other festivities. I haven't made it yet.

- In medium pan, combine milk and cocoa powder. Cook over low, stirring constantly with a wooden spoon, until the mixture pulls away from the sides of the pan, about 20 minutes. Add butter and salt. Mix thoroughly before removing from heat.
- When mixture is cool, rub hands with butter and shape into 1-inch balls. Roll in chocolate sprinkles. Place in mini paper cupcake forms.
- Store in fridge until served.

- Pour the condensed milk into a heavy based saucepan.
- Stir in the cocoa powder and the salt.
- Cook, stirring constantly, over a low heat. Keep the mixture at a slow simmer to prevent burning and sticking. Do not leave unattended.

- Heat the milk, bittersweet chocolate, butter and salt in a heavy saucepan over medium heat until the mixture thickens, about 15 minutes. Make sure you keep mixing the pan constantly with a wooden spoon. When the mixture begins to "dis-glue" from the pan or when you can see the bottom of the pan after scraping the wooden spoon on the bottom of the pan, you know the cooking process is over.
- Remove from heat and transfer mixture on a well greased plate.
- Let cool for 15 minutes.
- Grease your hands well and form 1 inch balls with your hands. Roll the balls into a plate full of sprinkles. Cover the ball well with the sprinkles. You may need to wash your hands in between rolling out these candies, because after a while the mixture will begin clinging to your hands. Wash out your hands, grease them up again (I just use a spray bottle) and begin rolling again. Serve in miniature paper liners.
Tips:
- Use high-quality chocolate. The better the chocolate, the better the brigadeiros will taste. Look for chocolate with a cocoa content of at least 50%. You also want to be sure the chocolate is not too sweet.
- Be patient when making the brigadeiro mixture. It takes time for the mixture to thicken and become smooth. Don't be tempted to rush the process by turning up the heat. Just keep stirring and the mixture will eventually come together.
