1 cup all-purpose flour
1/2 cup sugar
2 tablespoons baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda

1 cup bran flakes
2 large eggs, room temperature
1 cup mashed ripe bananas (about 2 medium)
1/3 cup canola oil
1/4 cup buttermilk

Steps:

  • Preheat oven to 400°. In a large bowl, whisk the first six ingredients. Stir in bran flakes. In another bowl, whisk eggs, bananas, oil and buttermilk until blended. 2-1/2 cups all-purpose flour
1-1/4 cups quick-cooking oats
1 cup sugar
2-1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup peanut butter
1/3 cup vegetable oil
2 large eggs
2 cups buttermilk
4-1/2 cups bran flakes cereal
1 cup semisweet chocolate chips

Steps:

  • In a bowl, combine the flour, oats, sugar, baking soda and salt; set aside. In a large bowl, beat the peanut butter and oil until combine. 1 cup water, warm
1 tablespoon ground flax seed
3 tablespoons water
1/2 cup oil
3/4 cup brown sugar
1 cup flour

1/2 cup chocolate chips

Steps:

  • Preheat oven to 350.
  • Put the bran and warm water in a bowl together, let sit 2-3 minutes.
  • Simmer the flaxseed in the 3 tablespoons water until thickened, 1-2 minutes.
  • Blend all ingredients together until well blended.
  • Pour into muffin tins and bake 18-20 minutes.
  • Note: These muffins have great flavor but they have come out pretty moist for me in the past, any suggestions are helpful.

1 1/2 cups all-bran cereal
1/2 cup boiling water
1 cup low-fat buttermilk
1/4 cup vegetable oil
1 egg, beaten
1 1/4 cups unsifted all-purpose flour
1/2 cup sugar (I use half Splenda and half sugar.)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup miniature semisweet chocolate chips
1/4 cup finely chopped dried apricot
all-bran cereal, for topping

Steps:

  • Combine the 1-1/2 cup cereal and boiling water in a medium bowl; blend well and allow to cool.
  • Add buttermilk, oil and egg; blending well.
  • Combine the flour, sugar, baking soda and salt in medium bowl; stir in cereal mixture, mini chips and chopped apricots.
  • Stir until moistened.
  • Spray six 5- to 6-oz custard cups with non-stick cooking spray.
  • Fill each cup half full with batter and sprinkle each with 2 tsp.
  • bran flake cereal.
  • Microwave on high for 2-1/2 to 3-1/2 minutes, turning 1/4 turn at end of each minute, or until wooden toothpick inserted off center comes out clean.
  • Tops will appear moist, let them stand several miutes.
  • Repeat the cooking procedure for remaining batter or place the left over batter in the fridge and store for another day.

Tips:

- For a richer flavor, use dark chocolate chips instead of semi-sweet. - To make the muffins even more moist, add a mashed banana to the batter. - For a crunchy topping, sprinkle the muffins with chopped nuts or oats before baking. - If you don't have any bran on hand, you can substitute whole wheat flour. - Be sure to not overmix the batter, as this will result in tough muffins. - For a lighter muffin, use skim milk instead of whole milk. - If you want to make a larger batch of muffins, simply double the recipe.
