CHOCOLATE CHIP BANANA NUT MUFFINS
I adapted this recipe with a few of my own changes from a Cooking for 2 Magazine recipe, so it is great for when you just want to mix up 1/2 dozen muffins. These are a very moist muffin with just enough chocolate and nut flavor. Tastes best fresh out of the oven.

Steps:
- In a mixing bowl, cream butter and sugar. Beat in the egg, banana, and vanilla.
- In separate bowl, combine the flours, baking powder, salt, baking soda, and cinnamon.
- Add the flour mixture to the creamed mixture just until moistened.
- Fold in the walnuts and chocolate chips.
- Coat 6 muffin cups with nonstick cooking spray and fill two-thirds full with batter.
- Bake at 350 degrees for 23-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

- Preheat oven to 325 degrees F (165 degrees C). Grease 12 muffin cups with butter or line with paper muffin liners.
- Stir sugar, oil, mayonnaise, and eggs together until creamy and light yellow. Mix in bananas until incorporated.
- Stir flour, oats, flax, wheat germ, baking soda, baking powder, and salt into banana mixture until smooth. Mix in chocolate chips and walnuts. Spoon batter into prepared pans.

- Set oven to 400 degrees.
- Line 12 muffin tins with paper liners.
- In a large bowl, sift together flour, sugar, cocoa, baking powder and salt.
- In a medium bowl, whisk together egg, milk, oil, bananas and vanilla; mix well to combine.
- Add the dry ingredients to the wet ingredients, stir JUST until moistened (don't worry about any small lumps remaining).

- 1. PREHEAT OVEN TO 375 DEGREES F.Spray muffin Tins with cooking spray or use cupcake liners. You will need about 3 muffin tins with 12 cups each. set aside. Sift flour with baking soda and cocoa powder into a medium size bowl and set aside.
- 2. In a large bowl cream together the butter, sugar, and eggs. Add mashed bananas and vanilla. Then add the flour mixture, and beat till well mixed.Add sour cream, chocolate chips & nuts & mix again.
- 3. Pour batter about 2/3 full and distribute evenly among cups. Bake in preheated 375 degree oven for 18 to 20 minutes, or until toothpick inserted in center comes out clean. Let cool slightly before removing to wire rack. Makes about 24 to 36 large muffins.
- 4. To add extra fiber to this recipe use 1 cup whole wheat flour and 2 cups all purpose. Proceed as directed. These muffins freeze well, and are great for breakfast with milk or coffee.
- 5. To make this recipe into two loaves, LOWER temperature to 350 degrees F. and bake for 1 hour. Follow steps above.
Tips:
- Use ripe bananas. The riper the bananas, the sweeter and more flavorful your muffins will be.
- Mash the bananas well. This will help to create a smooth batter and prevent the muffins from being lumpy.
- Don't overmix the batter. Overmixing can make the muffins tough. Mix just until the ingredients are combined.

- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. This will help to prevent them from breaking.
