For the "streusel" topping:
2/3 cup mini chocolate chips
2/3 cup dark brown sugar
1 1/2 tsp. cinnamon
(walnuts or pecans would add a nice crunch here)
For the coffee cake:
1 1/2 cups all-purpose flour
3/4 tsp. baking soda
3/4 tsp. baking soda
1/4 tsp. salt
2/3 cup granulated sugar

Steps:

  • 1. Preheat your oven to 350°F. Grease and flour a 9" x 9" metal baking pan. 2. In a small bowl, mix together chocolate chips, brown sugar, and cinnamon (and nuts, if you're using them). Set aside. 3. Into a medium bowl, sift together flour, baking powder, baking soda, and salt. 4. In a large bowl, beat together sugar, butter, and egg using an electric mixer. Once light and fluffy, beat in mashed bananas and yogurt. When combined, add dry ingredients and mix well. 5. Pour about half your batter into your prepared pan. Layer about 2/3 of your streusel mixture evenly on top of batter. Add remaining batter, followed by remaining streusel. 6. Bake coffee cake for approximately 45-50 minutes, or until a toothpick inserted into the center of your cake comes out clean. Allow to cool completely before cutting.

Tips:

  • Use ripe bananas for a sweeter, more flavorful cake. Overripe bananas are ideal.
  • Creaming together the butter and sugar until light and fluffy is essential for a tender, moist cake.
  • Gradually add the eggs one at a time, beating well after each addition to prevent curdling.
  • Fold in the dry ingredients gently until just combined. Overmixing will result in a tough cake.
  • Bake the cake in a preheated oven to ensure even baking. A toothpick inserted into the center of the cake should come out clean when it is done.
  • Allow the cake to cool completely before frosting. This will help to prevent the frosting from melting.
  • For a richer flavor, use dark chocolate chips instead of semi-sweet chocolate chips.
  • To make a gluten-free cake, use a gluten-free flour blend. Be sure to check the label to make sure that the flour blend is also dairy-free if you have a dairy allergy.
  • This cake can be stored in an airtight container at room temperature for up to 3 days.

Conclusion:

This chocolate banana coffee cake is a delicious and easy-to-make treat that is perfect for any occasion. With its moist crumb, sweet banana flavor, and rich chocolate chips, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special breakfast, brunch, or dessert, give this chocolate banana coffee cake a try.
