1 cup white sugar
½ cup shortening
1 ½ cups applesauce
2 tablespoons molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
½ teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour tube pan.
  • In a medium bowl, sift together the flour, baking soda, cinnamon, cloves and salt. Set aside.
  • In a large bowl, cream the sugar and shortening until fluffy. Add applesauce and molasses and mix in.
  • Gradually add the flour mixture and beat well to moisten. Fold in the raisins.
  • Pour into a prepared fluted or straight sided tube pan. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until toothpick inserted into the middle of cake comes out clean. Cake will not rise to top of pan. Cool for 10 minutes and remove from pan and cool on wire rack.

Steps:

  • Preheat the oven to 350 F and prepare a 9 inch round cake pan by either a) spraying it with a baking spray containing flour, b) buttering and flouring the pan, or c) buttering the pan and lining it with parchment paper.

2 1/4 cups super fine sugar
2 large eggs
2 1/2 cups unsweetened applesauce, preferably homemade
1 3/4 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon ground ginger
Pinch of salt
2 teaspoons baking powder
1 teaspoon pure vanilla extract
2 tablespoons Calvados or brandy
6 ounces bittersweet chocolate, chopped into 1/2-inch pieces
1 tablespoon confectioners' sugar
