2 large egg whites (about 60 grams)

1/2 teaspoon almond extract
confectioners' sugar, as needed

  • Preheat oven to 300 degrees F. Stack two matching, heavyweight, light to medium colored cookie sheets one inside the other (stacking two cookie sheets together keeps the bottoms of the cookies from getting too brown). Line with parchment paper or a silicone baking mat.In a large bowl, whisk together almond flour, sugar, cocoa and salt until evenly incorporated.In a mixing bowl or the bowl of a stand mixer fitted with the whisk attachment, whisk egg whites and lemon juice until they hold soft peaks.Add beaten egg whites and almond extract to dry ingredients and stir until mixture forms a soft, sticky dough, kneading with your hands if necessary. No need to be gentle here, we're not making macarons. ;)Lightly dust your hands with powdered sugar. Use a small cookie scoop to portion dough into 1-inch balls. 1 cup sugar
1 ⁄3 cup unsweetened cocoa powder
1 ⁄8 teaspoon fine salt
2 large egg whites
1 ⁄2 teaspoon pure vanilla extract
1 cup almond slivers (for decorating)
1 ⁄4 cup white sanding sugar (for decorating)

Steps:

  • Place two racks in the upper and lower thirds of the oven and preheat the oven to 375°F. Line 2 baking sheets with parchment paper.
  • Break the almond paste into small pieces and place in the bowl of a food processor. Add the sugar, cocoa powder, and salt, and process until the almond paste is very finely chopped and incorporated with the salt and sugar. Add the egg whites and vanilla, and process until a smooth dough forms, about 30 seconds. Using a small scoop or spoon, dollop 1 tablespoon of the batter for each cookie onto the baking sheet, leaving 2 inches between each cookie. 3/4 cup bittersweet chocolate or semisweet chocolate chips
1 cup slivered almonds
1 cup baby amaretti cookies (about 2 ounces)
1 stick (1/2 cup) unsalted butter, room temperature
2/3 cup sugar
2 teaspoons grated orange peel
4 large eggs
Unsweetened cocoa powder, for sifting

Steps:

  • Preheat the oven to 350 degrees F.
  • Spray a 9-inch springform pan the nonstick spray. Refrigerate. Microwave the chocolate until melted and smooth, stirring every 20 seconds, for about 1 minute.
  • Combine the almonds and cookies in processor. Pulse until the almonds and cookies are finely ground. Transfer the nut mixture to a medium bowl. Add the butter and sugar to the processor and blend until creamy and smooth. Add the grated orange peel and pulse briefly, until incorporated. Add the eggs 1 at a time. 1 cup whole almond (blanched)
1/2 cup sugar
1 tablespoon cocoa powder
2 tablespoons confectioners' sugar
2 egg whites
1 teaspoon almond extract
1 pinch cream of tartar
slivered almonds, to decorate (optional)

Steps:

  • Preheat oven to 350°F Place almonds on a sml baking sheet & bake 10-12 minutes, turning occ till golden brown. Allow almonds to cool to room temperature Reduce oven temp to 325°F.
  • Line a lrg baking sheet w/baking parchment. In a food processor, process the toasted almonds w/half the sugar till the almonds are finely ground but not oily.
  • Transfer the ground almonds to a bowl & stir in cocoa powder & confectioner's sugar. Set aside.
  • In a med mixing bowl, beat egg whites & cream of tartar w/a hand-held mixer till stiff peaks form.
  • Sprinkle in the remaining sugar 1 tbsp at a time, beating well after ea addition & cont beating till the whites are glossy & stiff. Beat in the almond extract.
  • Add the almond sugar mixture & gently fold into the beaten egg whites till just blended.
  • Spoon the mixture into a lrg piping bag filled w/a plain 1/2 in nozzle. Pipe 1 1/2 in rounds about 1 in apart on the prepared baking sheet. Press a slivered almond into the center of ea cookie.
  • Bake cookies for 12-15 minutes or till they are crisp. Cool on the baking sheet for 10 minutes.
  • W/a metal spatula, transfer cookies to wire racks to cool completely. When cool, store in an airtight jar or cookie tin.
