2 cups sugar
1 cup canola oil
3 large eggs, room temperature
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda

1/4 teaspoon baking powder
2 cups shredded peeled zucchini

Steps:

  • In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. 2 small zucchinis (about 12 ounces)
2/3 cup, plus 2 tablespoons sugar
1/2 cup almonds
1/2 teaspoon baking soda
Fine salt
1/3 cup vegetable oil
2 large eggs
1/4 cup honey
1/2 teaspoon vanilla extract
1/2 teaspoon finely grated lemon zest
