Tips:

  • Choose high-quality chocolate: The quality of the chocolate you use will have a big impact on the final product. Look for chocolate with a high cocoa content (70% or higher) and avoid chocolate with artificial ingredients.
  • Use fresh almonds: Fresh almonds will give your cake a better flavor and texture. If you can't find fresh almonds, you can use roasted almonds, but be sure to toast them yourself so that they're nice and crunchy.
  • Don't overmix the batter: Overmixing the batter can make the cake tough. Mix the ingredients just until they are combined.
  • Bake the cake in a water bath: Baking the cake in a water bath will help to prevent it from drying out. Place the cake pan in a larger pan filled with hot water.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.
