GARLIC-CHIVE GRILLED RED POTATOES

Provided by Melanie B.

Categories     Low Protein

Time 40m

Yield 4 serving(s)

Number Of Ingredients 8

6 red potatoes, medium sized
1/4 cup chopped fresh chives
2 tablespoons olive oil
1 tablespoon butter
1/2 cup parmigiano-reggiano cheese, fresh grated
2 tablespoons garlic, minced
1 tablespoon kosher salt
1 teaspoon black pepper, fresh ground

Steps:

  • Slice potatoes in 1/4 inch slices. I used a serrated potato slicer, but you can use a regular knife if necessary. Mix all ingredients together in a bowl. Spoon into 16 inch aluminum foil strips. Fold and seal into packets individuallly. Grill on medium heat 20-25 minutes, until cooked.
  • Serve.

Tips:

  • Use the right kind of potatoes. Red potatoes are the best choice for this recipe because they hold their shape well and have a slightly waxy texture that makes them less likely to fall apart when cooked.
  • Cut the potatoes into even-sized pieces. This will help them cook evenly.
  • Don't overcrowd the pan. If you put too many potatoes in the pan, they won't cook evenly.
  • Cook the potatoes over medium-high heat. This will help them get crispy on the outside and tender on the inside.
  • Season the potatoes well. Salt, pepper, garlic powder, onion powder, and paprika are all good options.
  • Add some fresh herbs. Chives, parsley, and dill are all good options.

Conclusion:

Chive Red Potatoes are a delicious and easy side dish that is perfect for any occasion. They are crispy on the outside and tender on the inside, and they are full of flavor. The fresh herbs add a bright and refreshing flavor that makes them irresistible. So next time you are looking for a side dish that is sure to please everyone, give these Chive Red Potatoes a try.
