Time 10m

Yield 4 servings

Number Of Ingredients 5

1 pound raw white mushrooms
1/2 cup extra-virgin olive oil
About 12 chive blossoms
1/3 cup chopped chives
Coarse salt and freshly ground pepper to taste

Steps:

  • Wipe the dirt off the mushrooms with paper towels. Slice the mushrooms and arrange them on a serving platter. Sprinkle the oil over the top (because the mushrooms absorb oil like a sponge, you may find it easier to brush them with the oil so that it is more evenly distributed).
  • Sprinkle the mushrooms with blossoms and chives and season with salt and pepper.

  • To clean the chive blossoms, gently shake them to remove any dirt or debris. You can also rinse them briefly under cold water, but be careful not to soak them.
  • If you don't have chive blossoms, you can substitute other edible flowers, such as nasturtiums, violas, or calendula.
  • Use a variety of mushrooms in the salad for a more complex flavor. Some good options include shiitake, oyster, cremini, and maitake mushrooms.
  • Sauté the mushrooms in butter or olive oil until they are golden brown and tender.
  • Add a splash of white wine or sherry to the mushrooms for extra flavor.
  • Serve the salad immediately, while the mushrooms are still warm.
