Time 20m

Number Of Ingredients 10

6- to 8-inch flour tortillas
olive or vegetable oil ((savory chips) OR)
melted butter ((sweet chips))
spices and seasonings (, to taste)
Sea Salt
Italian Herbs and grated Parmigiano Reggiano ((thyme, oregano, rosemary, basil))
Za'atar Seasoning ((sumac, seasame seeds, cumin, thyme, oregano, marjoram))
Hungarian Paprika, Sea Salt, and Garlic Powder
Garlic Powder, grated Parmiggiano Reggiano, and Sea Salt
Cinnamon Sugar ((1/4 cup granulated sugar mixed with 1-1/2 to 3 teaspoons ground cinnamon, to taste))

Steps:

  • Preheat oven to 400 degrees F. Brush each side of a tortilla with about 1/2 teaspoon oil or melted butter. Sprinkle one or both sides of tortilla with seasoning of choice.* Using a sharp knife or pizza wheel, cut tortilla in half and then crosswise into 1-inch wide strips, or simply cut into 8-wedges, and place in a single layer on a parchment-lined baking sheet. Repeat with remaining tortillas.
  • Bake until light golden brown and crisp 5-12 minutes (see note below), rotating pans halfway through if baking more than one at a time. Cool to room temperature. Baked chips keep well, stored in an airtight tin, for up to a week. (I find that the flavor and texture are actually best after a day or two.)

CHIPS MY EYE - VARIATION

Chips My Eye - Variation image

This is a Tanzania specialty: chips are placed at the bottom of a skillet, then whisked eggs are poured over it and the whole thing is cooked together until it's a solid omelet. My husband taught in Tanzania for a short while, and raved about this dish. I didn't realize how tasty it was until he asked me to make up a large batch of these for his students as part of celebrating International Day at their school. This is a variation that allowed me to make a large amount of omelets in a short period of time. It's not exactly the same, but my husband assured me the taste was very similar and the kids loved it. I garnished the plates with fresh sugar cane and each kid got a cup of mango juice.

Yield 1 omelet, 1 serving(s)

Number Of Ingredients 2

2 eggs
5 -6 French fries

Steps:

  • Bake the french fries and then turn off the oven. Keep them inside the oven so they stay warm. You could also heat them up in the microwave or even use a deep fryer, if you'd prefer.
  • Whisk the eggs.
  • Preheat a skillet on medium heat.
  • Pour the whisked eggs in the skillet and swish them around to coat the bottom, just like you're making a regular omelet.
  • When the omelet is nearly completely cooked, put the fries on one side, and fold the omelet over it.
  • Cook for about 10-20 second more, then remove from the skillet onto a plate.
  • Serve with salt, pepper, and ketchup.

Tips:

  • Prep the potatoes properly: Russet potatoes, also known as baking potatoes, are the best choice for making chips. They have a high starch content, which helps them crisp up nicely. Make sure to wash and peel the potatoes thoroughly before slicing them.
  • Slice the potatoes evenly: Use a mandoline slicer or a sharp knife to slice the potatoes into thin, even slices. This will help them cook evenly and prevent them from becoming soggy.
  • Soak the potato slices in water: Soaking the potato slices in cold water for at least 30 minutes helps to remove excess starch and prevent the chips from sticking together. This step is optional, but it can help to produce crispier chips.
  • Dry the potato slices thoroughly: Before frying the potato slices, make sure to pat them dry with a paper towel. This will help them crisp up and prevent them from becoming greasy.
  • Choose the right oil for frying: Use a high-heat oil, such as vegetable oil, corn oil, or peanut oil. These oils can withstand high temperatures without burning.
  • Fry the potato slices in small batches: Don't overcrowd the pan when frying the potato slices. This will prevent them from sticking together and becoming soggy. Fry them in small batches until they are golden brown and crispy.
  • Season the chips immediately: Once the potato chips are done frying, season them immediately with salt and other desired seasonings. This will help the seasonings adhere to the chips.

Conclusion:

Homemade potato chips are a delicious and versatile snack that can be enjoyed on their own or as a side dish. With the right ingredients and a little bit of effort, you can make crispy, flavorful potato chips that are sure to be a hit with your family and friends.
