DRIED BEEF / CHIPPED BEEF CHEESE BALL

Dried Beef / Chipped Beef Cheese Ball image

This is my most requested recipe. We have it at every family function, and it always goes fast. I often double the recipe, making one really large cheese ball. I got this from my mother, who got it from an old cookbook. It really is simple and delicious. You will never want to make another cheese ball. Enjoy!

Provided by History Teacher

Categories     Spreads

Time 10m

Yield 1 cheeseball, 12 serving(s)

Number Of Ingredients 7

1 (8 ounce) package cream cheese, softened
1 (2 ounce) package dried beef (also called chipped beef- I use Carl Budding)
1/4 cup green onion
1/2 teaspoon garlic salt
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice
2 tablespoons mayonnaise

Steps:

  • Dice the dried beef into small pieces. This is dependent upon how small you want your dried beef to be. I usually dice mine into 1/4" squares (approx.), but others like it more finely diced.
  • Dice/mince the green onions.
  • Add all of the ingredients to the softened cream cheese in a medium sized bowl. Stir. (I usually use my clean hands for this; a wooden spoon also works with a bit more effort). The ingredients should be consistent throughout the cheese ball.
  • Wrap in plastic wrap. Store in the fridge for at least 6-8 hours. This is one of those recipes that is at its best after sitting overnight. This way, the flavors really blend.
  • Serve with crackers. My family likes Wheat Thins, but it really goes with any type of cracker. Enjoy!

" THE" CREAMED DRIED BEEF/CHIPPED BEEF RECIPE

This is a long-time favorite recipe of our Lancaster County, PA family passed down from my mom. She gets requests for it all the time and has to make double or triple this amount now whenever she makes it so everyone has some to take along home too. For me, it's a true comfort food if there ever was one! We always serve it over toast and/or homefried potatoes. My dad refer's to it as S.O.S. from his days in the service. (Recipe makes about 4 servings for our hungry family but it freezes very well so any leftovers won't go to waste.)

Provided by Sherie717

Categories     Breakfast

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 5

1/2 lb dried beef (chipped, available at your grocer's deli counter)
1/2 cup butter
1 cup flour
3 1/2 cups milk (I use whole milk and even some heavy cream to make it thick & creamy)
black pepper (to taste)

Steps:

  • Melt butter in 2 quart (non-stick) sauce pan or larger.
  • Shred dried beef by hand into small pieces.
  • Add dried beef to melted butter and cook over medium-high heat until edges curl (about 10 minutes but watch carefully-don't burn it).
  • Stir in flour and mix thoroughly.
  • Add milk, reduce heat to medium low and continue stirring frequently until mixture is smooth & bubbly. (Depending on how thick you like it, it may take from 20 minutes to 1 hours to achieve desired consistency).
  • When it's as thick as you'd like, bring to a boil, stirring constantly and boil 1 minute.
  • Remove from heat and serve over toast and/or home fried potatoes.

CREAMED CHIPPED BEEF AND GREEN CHILE DIP

Creamed Chipped Beef and Green Chile Dip image

This dip is a favorite with Frito scoops. I use Stouffer's creamed chipped beef in the freezer section.

Provided by Jill Cooks

Categories     Dips

Number Of Ingredients 6

2 packages frozen creamed chipped beef, thawed
8 oz. package cream cheese, softened
3/4 cup shredded cheddar cheese, divided
4 oz. can diced green chiles
2 tablespoons chopped onion
3/4 teaspoon garlic powder

Steps:

  • 1. Preheat oven to 375.
  • 2. Combine cream cheese, 1/2 cup cheddar cheese, chilies, onion and garlic powder in medium bowl. Add chipped beef; stir well Transfer to 1 1/2 quart shallow baking dish; top with remaining cheddar cheese.
  • 3. Bake 20-25 minutes or until dip is bubbly and cheese topping is melted. Serve with tortilla chips and or corn chips.

Tips:

  • Use good quality chipped beef: Look for chipped beef that is a deep red color and has a slightly smoky smell. Avoid chipped beef that is brown or gray, as this indicates that it is old or has been improperly stored.
  • Soak the chipped beef before cooking: Soaking the chipped beef in cold water for 30 minutes before cooking will help to remove some of the salt and make it more tender.
  • Cook the chipped beef over low heat: Chipped beef is a very delicate meat, so it is important to cook it over low heat to prevent it from becoming tough.
  • Do not overcook the chipped beef: Chipped beef is best when it is cooked just until it is heated through. Overcooking will make it tough and dry.
  • Serve the chipped beef immediately: Chipped beef is best when it is served immediately after it is cooked. If you need to store it, let it cool completely and then store it in an airtight container in the refrigerator for up to 3 days.

Conclusion:

Chipped beef is a versatile and affordable ingredient that can be used in a variety of dishes. It is a great source of protein and iron, and it is also very easy to cook. With a little bit of planning, you can easily create a delicious and satisfying meal with chipped beef.
