4 pounds sweet potatoes (6 potatoes)
1 cup whole milk
1 cup heavy cream
1 tablespoon minced canned chipotle chiles in adobo sauce, with seeds, such as Goya
1 tablespoon adobo sauce (from the can of chiles)
1/4 cup pure Grade A maple syrup
4 tablespoons (1/2 stick) unsalted butter, diced
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a sheet pan with aluminum foil.
  • Place the sweet potatoes on the prepared sheet pan and pierce each potato 4 times with a small knife. Roast for 1 to 1 1/4 hours, until very tender inside when tested with a knife. Set aside until cool enough to handle. (Leave the oven on.) Peel the potatoes, discard the skins and place the potatoes in the bowl of an electric mixer fitted with the paddle attachment.
  • Meanwhile, place the milk, cream, chipotle chile and adobo sauce in a small saucepan. Bring to a boil, lower the heat and simmer for 5 minutes. (It might look curdled.)
  • With the mixer on low speed, add the chipotle-milk mixture to the sweet potatoes. Add the maple syrup, butter and 1 tablespoon salt. Mix until the potatoes are coarsely pureed. Pour into a 9-by-12-by-2-inch oval oven-to-table baking dish and bake for 30 minutes, until heated through. Sprinkle with salt and pepper and serve hot.
  • Make ahead: Prepare the sweet potato mixture, spoon it into the baking dish, cover and refrigerate for up to 3 days. Bake at 350 degrees F for 40 to 45 minutes, until hot.

1 tbsp. unsalted butter
1 medium onion, chopped
1 1/2 lbs. sweet potatoes, peeled and cut into 1 1/2 inch cubes
2 1/2 cups chicken broth
1 tsp. finely chopped canned chipotle chile in adobo sauce
1/2 cup plus 1 1/2 tbsp. crème fraiche or sour cream
1 tbsp. freshly squeezed lime juice
salt
1 tbsp. coarsely chopped fresh cilantro or parsley

Steps:

  • 1. In large pan, melt butter over medium heat. Add onion and cook, stirring occasionally til softened, but not browned, 3 to 5 minutes.
  • 2. Add sweet potatoes and enough of the chicken broth to cover. Increase head to medium high and bring to boil. Reduce heat to medium low and cook, partially covered til sweet potatoes are tender when pierced with tip of sharp knife, about 20 minutes.
  • 3. Remove pan from heat. Using handheld immersion blender, puree sweet potatoes in broth til smooth. Alternatively puree in batches in blender or food processor til smooth and return the sweet potatoes to the pan. Beat in chipotle chile.
  • 4. Whisk in 1/2 cup of the crème fraiche and the lime juice. If mixture is too thick, whisk in a little additional broth or water. Season wit salt to taste.Cook over medium low heat til heated through, about 5 minutes
  • 5. Transfer to a ceramic or enameled cast iron fondue pot. Drizzle remaining 1 1/2 Tbsp. crème fraiche on top and sprinkle with the cilantro. Regulate heat under pot, if possible so that fondue remains warm, not hot. Makes about 4 cups or 10 to 12 appetizer servings.

Steps:

  • Arrange an oven rack in the lower third of the oven and preheat to 350 degrees F.

5 pounds sweet potatoes (about 10 medium or 5 large), scrubbed
1/3 to 1/2 cup maple syrup
3/4 cup sour cream or crème fraîche
4 teaspoons purée from canned chipotles

3 canned whole chipotle chilies in adobo*, or to taste, minced (about 1 1/2 tablespoons)
fried shallots, thinly sliced scallion greens, and/or crumbled cooked bacon for stirring into fondue is desired
For the fried shallots:
1 1/2 cups thinly sliced shallots (about 8 large)
4 tablespoons vegetables oil
Accompaniments
assorted cooked vegetables such as broccoli, carrots, pearl onions, and potatoes
bread sticks
cubes of day-old French, Italian, or sourdough bread

Steps:

  • To make the fondue:
  • In a bowl toss together cheeses and cornstarch.
  • Rub inside of a heavy 3- to 4-quart saucepan with garlic halves, leaving garlic in pan, and add wine and lemon juice. Bring liquid just to a boil and stir in cheese mixture by handfuls. Bring mixture to a bare simmer over moderate heat, stirring, and stir in kirsch, nutmeg, chilies, and pepper to taste. Transfer fondue to a fondue pot and set over a low flame.
  • Stir in fried shallots, scallions, and/or bacon if using and serve fondue with accompaniments for dipping. (Stir fondue often to keep combined.)
  • To make the fried shallots:
  • In a heavy 10- to 12-inch skillet cook shallots in oil moderately high heat, stirring, until golden brown. Transfer shallots with a slotted spoon to paper towels to drain and season with salt. Makes about 2/3 cup.
