3/4 cup ketchup
1/2 cup frozen corn
1/2 cup canned black beans, rinsed, drained
1/2 cup tomato sauce
1 -2 teaspoon minced chipotle chile in adobo
1/2 teaspoon ground cumin
1/4 cup chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon black pepper
4 hamburger buns, toasted

Steps:

1 cup finely chopped sweet onion
1/2 cup finely chopped green pepper
1 jalapeno pepper, seeded and finely chopped, optional
1/2 cup chili sauce
1/2 cup water
1 to 2 chipotle peppers in adobo sauce, finely chopped
1 tablespoon packed brown sugar
1 teaspoon yellow mustard
6 kaiser rolls or hamburger buns, split
2 tablespoons butter, softened
Pickle slices, optional

Steps:

  • Preheat broiler. In a large skillet, cook beef, onion, green pepper and, if desired, jalapeno over medium heat until beef is no longer pink, breaking up beef into crumbles, 5-7 minutes; drain., Stir in chili sauce, water, chipotle peppers, brown sugar and mustard; bring to a boil.
