Time 40m

Yield 4 servings

Number Of Ingredients 13

1 1/2 teaspoons chipotle chile powder
1 teaspoon ground cumin
2 navel oranges, 1 zested
Kosher salt
4 5-ounce skinless salmon fillets, cut into strips
1 avocado, diced
2 tablespoons finely diced red onion
1/2 cup fresh cilantro, chopped, plus more for topping
1/2 jalapeño pepper, seeded and finely diced
1 lime, 1/2 juiced and 1/2 cut into wedges
Vegetable oil, for grilling
1 ear of corn, shucked
12 corn tortillas

Steps:

  • Preheat a grill to medium high. Whisk together the chipotle powder, cumin, orange zest and 1/2 teaspoon salt. Toss with the salmon and set aside.
  • Meanwhile, cut off the tops and bottoms of the oranges with a sharp knife. Place cut-side down, then cut off the peel and white pith. One at a time, hold each orange over a bowl and cut along the membranes to remove the segments, letting them fall into the bowl. Squeeze the juice from the membranes into the bowl. Chop the orange slices into small pieces, then return to the bowl. Add the avocado, red onion, cilantro, jalapeño, lime juice and a pinch of salt; toss well.
  • Lightly oil the grill and add the corn. Grill, turning occasionally, until charred all over, 12 to 15 minutes. After a few minutes, add the salmon to the grill and cook until well marked and charred at the edges, about 2 to 4 minutes per side, depending on the thickness. Grill the tortillas until marked and warmed, 20 to 30 seconds per side.
  • Cut the corn kernels off the cob and toss with the avocado-orange salsa. Divide the tortillas among plates and top with the salmon, salsa and more cilantro. Serve with the lime wedges.

CHIPOTLE-RUBBED SALMON TACOS

Chipotle-Rubbed Salmon Tacos image

From Food & Wine Magazine March 2010 - This is super yummy, but much too spicy as written for our taste. I reduce the Chipotle to 3/4 t. We also like the fish more as is, with the avocado and mayo lime sauce without the cabbage and tortillas.

CHIPOTLE RUBBED SALMON

CHIPOTLE RUBBED SALMON image

Categories     Fish     Dinner

Number Of Ingredients 9

3 tbsp Paprika
3 tbsp Garlic Powder
3 tsp Sea Salt
3 tsp Onion Powder
2 tsp Black Pepper
3 tsp Chipotle Chili Powder
1-1/2 tsp Thyme
1-1/2 tsp Oregano
1 cup Extra Virgin Olive Oil

Steps:

  • Mix powder together until well blended. Add oil until it forms a thick paste. Makes enough for 5 lbs of salmon.

Tips:

  • Choose the right salmon. Look for wild-caught salmon that is fresh or frozen. Avoid farmed salmon, as it is often lower in quality and may contain contaminants.
  • Make sure the salmon is cooked properly. Salmon is a delicate fish, so it is important to cook it carefully. Overcooked salmon will be dry and tough. The best way to cook salmon is to grill, bake, or poach it.
  • Use a good-quality chipotle powder. Chipotle powder is made from smoked jalapeños, and it has a rich, smoky flavor. Choose a chipotle powder that is fresh and has a vibrant color.
  • Don't be afraid to experiment with different flavors. The chipotle rub in this recipe is just a starting point. You can add other spices and herbs to create a rub that is tailored to your own taste.

Conclusion:

Chipotle-rubbed salmon tacos are a delicious and easy way to enjoy this healthy fish. The chipotle rub gives the salmon a smoky, flavorful crust, while the tacos are a fun and casual way to serve it. Whether you are entertaining guests or just looking for a quick and easy weeknight meal, chipotle-rubbed salmon tacos are sure to please.
