CHIPOTLE PORK WITH STRAWBERRY-AVOCADO SALSA

Chipotle Pork With Strawberry-Avocado Salsa image

This was printed in our local newspaper. Prep time includes marinating. I made it the other night and it was wonderful. I did need to grill the pork for longer, but the tenderloins I had were kind of thick. I also used a little more lime juice in the "marinade", which I found to be more like a wet-rub than a marinade.

Time 2h35m

Yield 6 serving(s)

Number Of Ingredients 12

2 tablespoons chipotle chiles, minced (canned in adobo sauce)
2 tablespoons lime juice
3/4 cup onion, sliced
2 garlic cloves, crushed
1 1/2 lbs pork tenderloin
1/2 teaspoon salt
1 quart fresh strawberries, hulled and quartered
2/3 cup avocado, peeled and chopped
2 tablespoons scallions, thinly sliced
2 tablespoons fresh cilantro, chopped
2 tablespoons lime juice
1/4 teaspoon salt

Steps:

  • For pork, combine all but the salt in a large plastic zipper bag. Marinate in refrigerator, turning the bag occasionally, for 2 hours.
  • Remove pork and discard marinade; sprinkle pork evenly with salt.
  • Grill pork over indirect heat for about 20 minutes, or until internal temperature reaches 155°. Let stand 10 minutes. Slice crosswise.
  • For salsa, combine all ingredients in a medium bowl and toss gently. Serve immediately with the sliced pork.

Tips:

  • Choose the right cut of pork:Pork shoulder (also known as pork butt) is the best cut for this recipe because it is a tough cut that becomes tender when cooked slowly.
  • Sear the pork before slow-cooking:Searing the pork before slow-cooking helps to develop flavor and color.
  • Use a flavorful rub:The rub for this recipe is made with a combination of chipotle powder, cumin, garlic powder, onion powder, and salt. This rub gives the pork a smoky, savory flavor.
  • Slow-cook the pork on low heat:Slow-cooking the pork on low heat for 8-10 hours allows the meat to become fall-apart tender.
  • Shred the pork:Once the pork is cooked, shred it with two forks.
  • Make the avocado crema:The avocado crema is a creamy, tangy sauce that is made with avocado, sour cream, lime juice, and cilantro.
  • Assemble the wraps:To assemble the wraps, place a tortilla on a plate. Spread some avocado crema on the tortilla, then top with shredded pork, shredded cabbage, and diced tomatoes. Fold the tortilla in half or roll it up.

Conclusion:

This recipe for Chipotle Pork and Avocado Wraps is a delicious and easy-to-make meal that is perfect for a busy weeknight dinner. The pork is slow-cooked until it is fall-apart tender, and the avocado crema is a creamy, tangy sauce that complements the pork perfectly. These wraps are sure to be a hit with your family and friends.
