Steps:
- 1. Mix mayo with dry Ranch dressing pkt.
- 2. Combine the bread crumbs and Parmesan cheese and pour onto a paper plate, set aside
- 3. Using a BBQ brush, cover the fish, on both sides, with the herb mayo {I find this easier if the fish is still partially frozen}
- 4. Dredge each piece of fish in the bread crumbs/cheese mixture & place on a greased cookie sheet {Lightly spray the top of the fish with butter flavored spray, before baking, for extra crispiness}
- 5. Bake at 375 for 8-12 minutes {thawed} or 20-25 minutes {partially frozen}
- 6. Note: When fish "flakes with a fork," it is usually a bit overcooked and may be dry. This test is better: Using your finger, press on the cooked flesh gently. When it is done, the fibers will separate in solid flakes. If the fibers fall apart, the fish has been cooked too long
CHIPOTLE & PARMESAN CRUSTED TILAPIA

- Fill a ziploc bag with 1/2 cub vinegar, add 2 cups water. Close bag and set aside Take the eggs, milk and Grey Poupon mustard and stir together in a shallow bowl, set aside. Take the next dry ingredients and mix together in a wide shallow bowl, set aside. Take the fish from the ziploc bag and rinse lightly with water, setting aside to drain. Take a filet and coat both sides in the wet mixture. Coat both sides in the dry mixture. Continue with rest of fish in same fashion. Put in olive oil sprayed baking dish in 450 degree oven for 12 minutes. You can place the fish filets closely together for a tight fit. Top with remainder 2 TBSP. parmesan. Serve hot over rice with avacado, tomato and red onion relish.
BROILED TILAPIA PARMESAN
Steps:
- Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
- In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
- Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes.
