2 tablespoons olive oil
2 tablespoons lime juice
1 tablespoon honey
2 (3 to 3 1/2-lb.) quartered frying chickens (8 quarters), skin and fat removed if desired
1 medium tomato, chopped
1 medium avocado, pitted, peeled and chopped
2 tablespoons chopped fresh cilantro
2 tablespoons finely chopped red onion
1/2 teaspoon garlic salt
1 to 2 teaspoons chopped chipotle chiles in adobo sauce (from 7 or 11-oz. can)

Steps:

  • Heat gas or charcoal grill. In medium bowl, combine taco seasoning mix, oil, lime juice and honey; mix well. Brush mixture evenly over all sides of chicken quarters.

3 tablespoons vegetable oil, plus more for drizzling
2 tablespoons chipotle in adobo (1 tablespoon finely chopped chipotle peppers and 1 tablespoon sauce)
2 tablespoons chipotle in adobo (1 tablespoon finely chopped chipotle peppers and 1 tablespoon sauce)
2 teaspoons smoked paprika
1 teaspoon honey
1 teaspoon dried oregano, preferably Mexican
1/2 teaspoon ground cumin
2 cloves garlic, finely grated
Zest of 1 lime and juice of 1/2, plus wedges for serving
Zest of 1 lime and juice of 1/2, plus wedges for serving
Kosher salt and freshly ground black pepper
1 whole chicken (3 1/2 to 4 pounds)
2 bunches scallions, root ends trimmed
16 small corn tortillas
Prepared salsa, for serving

Steps:

  • Mix together the vegetable oil, chipotle and sauce, smoked paprika, honey, oregano, cumin, garlic, lime zest and juice, 2 teaspoons salt and 1/4 teaspoon pepper in a small bowl. Rub some under the skin of the chicken breasts and thighs, and then all over the outside of the chicken. Let sit at room temperature for 30 minutes.
  • Prepare a grill for low indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to low. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Place the chicken breast-side up on the indirect side. Cover and cook, rotating the chicken periodically, until an instant-read thermometer inserted in the thickest part of the thigh (avoiding the bone) reads at least 165 degrees F, 1 hour and 30 minutes to 1 hour and 40 minutes. (If using charcoal, you might have to add more charcoal during cooking.) Let the chicken rest 20 minutes before carving.
  • Meanwhile, increase the grill to medium-high heat. Drizzle some oil on the scallions and sprinkle with salt and pepper. Grill until softened and darkly charred in spots on all sides, just a few minutes. At the same time, warm up the tortillas on the grill, about 1 minute per side; stack grilled tortillas and wrap in foil to keep warm.
  • Serve chicken with warm tortillas, charred scallions, lime wedges and salsa.

2 garlic cloves
¼ teaspoon cayenne pepper
¼ teaspoon paprika
⅛ teaspoon ground black pepper

2 tablespoons honey
¼ cup balsamic vinegar
¼ cup olive oil
kosher salt to taste
4 skinless chicken drumsticks

Steps:

  • Place the chipotle peppers, garlic, cayenne pepper, paprika, black pepper, cumin, lime juice, Worcestershire sauce, honey, vinegar, and olive oil into a blender. Puree until no pieces of garlic remain. Pour 1/4 of the marinade into a small dish and set aside. Rub a pinch of kosher salt into each chicken drumstick and place into a resealable plastic bag. Pour in the marinade, shake, and seal. Marinade at least 2 hours in the refrigerator.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove the chicken from the marinade and shake off excess. Discard the remaining marinade.

4 large garlic cloves
2 tablespoons vegetable oil
1 teaspoon kosher salt
3 small whole chickens, cut into halves or 3 small whole chickens, cut into quarters
3 ripe Hass avocadoes, pitted, peeled, and cut into 1/2 inch pieces

1 lime, juice of
1/3 cup finely diced white onion
3 fresh cilantro stems, stemmed and chipped

Steps:

  • In a food processor, puree the chipotles, garlic, oil, and salt. Wipe the chickens with paper towels. Thoroughly coat the pieces on all sides with a layer of the chipotle paste.
  • Place in a nonreative baking dish or in resealable bags and refrigerate for 2 hours, or as long as overnight.

1 tablespoon olive oil
salt & freshly ground black pepper
1 canned chipotle chile in adobo, drained and minced
1/4 cup sour cream
1/4 cup mayonnaise
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
8 (6 inch) corn tortillas
2 cups grated monterey jack cheese
pico de gallo or other salsa

Steps:

  • Brush chicken breasts with olive oil and sprinkle with salt and pepper. Lay chicken on a grill over medium heat (you can hold you hand 1 or 2 inches above grill level only 4 to 5 seconds) or put chicken in a grill pan over medium heat.
