CHIPOTLE SMASHED SWEET POTATOES

Categories     side-dish

Time 1h50m

Yield 8 servings

Number Of Ingredients 8

4 pounds sweet potatoes (6 potatoes)
1 cup whole milk
1 cup heavy cream
1 tablespoon minced canned chipotle chiles in adobo sauce, with seeds, such as Goya
1 tablespoon adobo sauce (from the can of chiles)
1/4 cup pure Grade A maple syrup
4 tablespoons (1/2 stick) unsalted butter, diced
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a sheet pan with aluminum foil.
  • Place the sweet potatoes on the prepared sheet pan and pierce each potato 4 times with a small knife. Roast for 1 to 1 1/4 hours, until very tender inside when tested with a knife. Set aside until cool enough to handle. (Leave the oven on.) Peel the potatoes, discard the skins and place the potatoes in the bowl of an electric mixer fitted with the paddle attachment.
  • Meanwhile, place the milk, cream, chipotle chile and adobo sauce in a small saucepan. Bring to a boil, lower the heat and simmer for 5 minutes. (It might look curdled.)
  • With the mixer on low speed, add the chipotle-milk mixture to the sweet potatoes. Add the maple syrup, butter and 1 tablespoon salt. Mix until the potatoes are coarsely pureed. Pour into a 9-by-12-by-2-inch oval oven-to-table baking dish and bake for 30 minutes, until heated through. Sprinkle with salt and pepper and serve hot.
  • Make ahead: Prepare the sweet potato mixture, spoon it into the baking dish, cover and refrigerate for up to 3 days. Bake at 350 degrees F for 40 to 45 minutes, until hot.

Yield Makes 12 servings

Number Of Ingredients 8

1/2 cup brown raisins
1/2 cup golden raisins
1/4 cup brandy
5 pounds garnet yams or other yams (red-skinned sweet potatoes), peeled, cut into 3/4-inch cubes
3/4 cup pure maple syrup
1/2 cup (packed) golden brown sugar
1/4 cup (1/2 stick) unsalted butter
1 1/2 cups walnut pieces, toasted

Steps:

  • Combine brown raisins, golden raisins, and brandy in small bowl; toss to blend. Let soak at least 30 minutes and up to 1 hour.
  • Cook yams in large pot of boiling salted water until just barely tender, about 8 minutes. Using large slotted spoon, transfer yams to baking sheet to cool.
  • Meanwhile, bring 3/4 cup maple syrup, 1/2 cup brown sugar, and 1/4 cup unsalted butter to boil in heavy medium saucepan over medium heat, stirring until brown sugar dissolves. Boil 2 minutes.
  • Butter 15x10x2-inch glass baking dish. Drain raisins (reserve brandy for another use). Place raisins in very large bowl. Add cooked yams, then maple syrup mixture and toasted walnut pieces. Toss gently to coat evenly, being careful to keep yams intact. Transfer yam mixture to prepared baking dish. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.
  • Preheat oven to 350°F. Bake yams uncovered until syrup is thick and bubbling, basting occasionally, about 55 minutes. Let stand 10 minutes and serve.

SWEET POTATOES WITH MAPLE AND CHIPOTLES

Sweet Potatoes with Maple and Chipotles image

This is a Bobby Flay recipe ginned up specifically for Thanksgiving in response to a request from The Times back in 2003. Mr. Flay came through in spades: The sweetness of the potatoes is amplified by maple syrup, then taken in a completely different direction by the addition of fiery chipotle sauce. Sour cream knits the dish together perfectly.

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 6

5 pounds sweet potatoes (about 10 medium or 5 large), scrubbed
1/3 to 1/2 cup maple syrup
3/4 cup sour cream or crème fraîche
4 teaspoons purée from canned chipotles
1 1/2 teaspoons ground cinnamon
Salt to taste

Steps:

  • Put oven rack in middle position and heat oven to 375 degrees. Place potatoes on large baking sheet and bake until soft, 35 to 40 minutes for medium potatoes, up to 1 hour for large.
  • Meanwhile, combine syrup, sour cream or crème fraîche, chipotle purée, cinnamon and salt in a small bowl. Whisk until smooth.
  • When potatoes are tender, remove from oven and slice in two lengthwise. Scoop hot flesh into a potato ricer or food mill, and purée into bowl with other ingredients. Stir with rubber spatula to combine. Potatoes should be light and fluffy. Taste for seasoning, transfer to warm serving bowl and serve immediately.

Tips:

  • Choosing the Right Yams: Select garnet yams that are firm and have a deep, reddish-brown skin. Avoid yams with blemishes or soft spots.
  • Cooking the Yams: You can bake, roast, or boil the yams. Baking is the recommended method as it allows the yams to caramelize and develop a slightly crispy exterior while maintaining a tender interior.
  • Enhancing Flavor: To add depth of flavor to the yams, toss them with a mixture of olive oil, salt, and pepper before baking. You can also add herbs and spices like cumin, paprika, or chili powder for extra zest.
  • Making the Chipotle Sauce: Use a combination of canned chipotle peppers in adobo sauce, mayonnaise, sour cream, lime juice, and cilantro to create a creamy and flavorful sauce. Adjust the amount of chipotle peppers and lime juice to your preferred level of spiciness and tanginess.

Conclusion:

Combining smoky chipotle, creamy avocado, and vibrant pomegranate arils, this recipe for Chipotle Garnet Yams offers a unique and delicious flavor experience. The tender, caramelized yams, zesty chipotle sauce, and refreshing topping create a harmonious balance of flavors and textures. Whether served as a side dish or a main course, these Chipotle Garnet Yams are sure to impress your taste buds and become a favorite in your kitchen.
