CHIPOTLE RANCH DIP
I came up with a very quick, easy lower-in-fat dip or sauce to make with those leftover chipotle peppers. This dip combines the smoky chipotle with the great seasoning of ranch dressing mix. Makes a great veggie dip, or even a topping on hamburgers or Mexican foods. Chipotle peppers are very spicy; start with one and taste. Removing seeds will tone down the heat. I usually use 2 with seeds. You can also substitute low-fat Greek yogurt in place of the sour cream.

SPICY CHIPOTLE BEAN DIP
Healthy, spicy, and very low fat! I think you'll like this if you like a little heat in your dip and, it's a little different than the many other good recipes posted here on 'Zaar. To reduce the heat, you can omit or use less of the adobo sauce, use only 1 chipotle pepper, or use a mild salsa (I like Pace Medium Chunky Salsa and don't measure). I use my favorite brand of refried black beans, but the recipe works just as well with refried pinto beans, which make a great foundation for bean nachos if you don't use too much salsa. Serve with tortilla chips.

FALAFEL WITH CHIPOTLE TAHINI DIP
Provided by Ree Drummond : Food Network
Time 40m
Yield 30 pieces
Number Of Ingredients 17
Steps:
- Special equipment: a deep-fry thermometer
- For the sauce: In the bowl of a food processor, add the tahini, lemon juice, olive oil, garlic, chipotle and adobo sauce and salt and pepper to taste and process until smooth. If it is too thick, add some water a couple tablespoons at a time until it is the consistency of heavy cream. Scrape into a bowl, cover and refrigerate until ready to serve.
- For the falafel: Using the same processor bowl, add the chickpeas and process until coarsely ground. Add the flour, parsley, cilantro, baking powder, cumin, cayenne, scallion, 1 teaspoon salt and 1/2 teaspoon pepper and process until well mixed but not totally smooth. Check the consistency to make sure it will hold together. If it is too dry, add some water a little at a time. Taste and adjust the seasoning.
- Add about 2 inches of vegetable oil to a deep skillet and heat until a deep-fry thermometer registers 325 degrees F.
- Using a small scoop or a tablespoon, scoop out small balls of the falafel mixture and gently drop them into the hot oil. Cook in batches, turning them over from time to time, until golden brown and cooked through, for between 30 and 60 seconds. Drain on paper towels while you cook the rest.
- To serve: Cut the top off each pita and form a pocket. Drizzle some sauce into each pita and add 4 or 5 falafel pieces. Top with the greens, carrots, scallions and plenty more sauce. Alternatively, build a salad with the vegetables, then top with falafel and sauce.

Tips:
- Choose ripe avocados: The riper the avocados, the creamier and more flavorful your dip will be.
- Use fresh lime juice: Fresh lime juice adds a bright, citrusy flavor to the dip. Bottled lime juice can be used in a pinch, but it doesn't have the same flavor.
- Don't over-process the dip: Over-processing the dip can make it too smooth and runny. Pulse the ingredients in a food processor or blender until they are just combined.
- Serve the dip immediately: Chipotle dip is best served immediately after it is made. The flavors will meld together over time, but the dip will start to brown.
- Garnish the dip with your favorite toppings: Some popular toppings for chipotle dip include chopped cilantro, diced tomatoes, shredded cheese, and sour cream.
Conclusion:
Chipotle dip is a delicious and versatile dip that can be enjoyed with a variety of snacks and appetizers. It is also a great way to use up leftover avocados. Whether you are serving it at a party or enjoying it as a snack at home, chipotle dip is sure to be a hit.
