I came up with a very quick, easy lower-in-fat dip or sauce to make with those leftover chipotle peppers. This dip combines the smoky chipotle with the great seasoning of ranch dressing mix. 2 medium tomatoes, cored and cut into medium dice
2 teaspoons kosher salt, more as needed
1 large yellow onion, finely diced
3 large garlic cloves, minced
1 tablespoon chili powder
2 (15 1/2 ounce) cans black beans, rinsed and drained well
2 chipotle chiles in adobo, minced (about 1 Tbs.)
3 tablespoons adobo sauce
3 tablespoons cider vinegar
1 1/2 cups frozen corn kernels (thawed)
1 1/2 cups sharp cheddar cheese, grated
1 1/2 cups monterey jack cheese, grated
3/4 cup fresh cilantro, chopped

  • Heat the oven to 425ºF. Grease a 1-1/2 quart baking dish with oil and line a baking sheet with foil. Set the tomatoes in a colander over the sink and sprinkle with 1 teaspoons of the salt.

1 large garlic clove, unpeeled
1 tablespoon vegetable oil
eight 5- to 6-inch flour tortillas
1 cup chopped red bell pepper (about 1 large)
1 cup coarsely grated jack cheese
1/2 stick (1/4 cup) unsalted butter, softened
Accompaniment: chipotle lime sour cream dip
For the dip:
1 canned chipotle chili in adobo*, minced
2 teaspoons fresh lime juice
1 cup sour cream

  • To make the quesadillas:
  • Preheat oven to 400°F.
  • In a shallow baking pan arrange squash, onion, and garlic in one layer and drizzle with oil, tossing to coat. Roast mixture in middle of oven 15 minutes, or until garlic is tender and transfer garlic to a work surface. Roast squash and onion until tender, about 15 minutes more. Discard peels from squash, onion, and garlic.

Healthy, spicy, and very low fat! I think you'll like this if you like a little heat in your dip and, it's a little different than the many other good recipes posted here on 'Zaar. To reduce the heat, you can omit or use less of the adobo sauce, use only 1 chipotle pepper, or use a mild salsa (I like Pace Medium Chunky Salsa and don't measure). I use my favorite brand of refried black beans, but the recipe works just as well with refried pinto beans, which make a great foundation for bean nachos if you don't use too much salsa. Serve with tortilla chips.

Steps:

  • Heat oven to 350°F. Cover chiles with boiling water; let stand 10 minutes. Drain chiles and remove seeds. Chop chiles

1/2 cup tahini
2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1/2 canned chipotle chile in adobo, finely chopped, plus 2 teaspoons adobo sauce
Kosher salt and freshly ground black pepper
Two 15-ounce cans chickpeas, rinsed and drained
1/3 cup all-purpose flour
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1 teaspoon baking powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne
1 scallion, chopped
Kosher salt and freshly ground black pepper
Vegetable oil, for frying
Serving suggestions: pita bread, salad greens, shredded carrots, sliced scallion greens

Steps:

  • Special equipment: a deep-fry thermometer
  • For the sauce: In the bowl of a food processor, add the tahini, lemon juice, olive oil, garlic, chipotle and adobo sauce and salt and pepper to taste and process until smooth. If it is too thick, add some water a couple tablespoons at a time until it is the consistency of heavy cream. Scrape into a bowl, cover and refrigerate until ready to serve.
  • For the falafel: Using the same processor bowl, add the chickpeas and process until coarsely ground. Add the flour, parsley, cilantro, baking powder, cumin, cayenne, scallion, 1 teaspoon salt and 1/2 teaspoon pepper and process until well mixed but not totally smooth. Check the consistency to make sure it will hold together. If it is too dry, add some water a little at a time. Taste and adjust the seasoning.
  • Add about 2 inches of vegetable oil to a deep skillet and heat until a deep-fry thermometer registers 325 degrees F.
  • Using a small scoop or a tablespoon, scoop out small balls of the falafel mixture and gently drop them into the hot oil. Cook in batches, turning them over from time to time, until golden brown and cooked through, for between 30 and 60 seconds. Drain on paper towels while you cook the rest.
  • To serve: Cut the top off each pita and form a pocket. Drizzle some sauce into each pita and add 4 or 5 falafel pieces. Top with the greens, carrots, scallions and plenty more sauce. Alternatively, build a salad with the vegetables, then top with falafel and sauce.
