**Coleslaw gets a smoky, spicy upgrade with the addition of chipotle peppers in this easy and flavorful side dish.**
This recipe combines the classic flavors of coleslaw with a zesty kick from chipotle peppers. The coleslaw is made with a combination of green and red cabbage, carrots, and red onion, tossed in a creamy dressing made with mayonnaise, sour cream, Dijon mustard, and chipotle peppers. The dressing is what truly sets this coleslaw apart, as it combines the richness of the mayonnaise and sour cream with the tanginess of the mustard and the smokiness of the chipotle peppers. The result is a coleslaw that is both creamy and spicy, with a hint of sweetness from the carrots.
This recipe also includes variations for a vinegar-based dressing and a vegan dressing, so that everyone can enjoy this delicious side dish. The vinegar-based dressing is made with apple cider vinegar, Dijon mustard, and olive oil, while the vegan dressing is made with Greek yogurt, lemon juice, and Dijon mustard. No matter which dressing you choose, this chipotle coleslaw is sure to be a hit at your next potluck or barbecue.

Tips:
- Choose the right cabbage. Green cabbage is the most common type used for coleslaw, but you can also use red cabbage or a mix of both. If you're using green cabbage, be sure to choose a head that is firm and heavy.
- Shred the cabbage thinly. This will help the dressing to coat the cabbage evenly. You can use a food processor fitted with a shredding disc or a sharp knife.
- Rinse the cabbage after shredding. This will help to remove any excess starch and make the coleslaw less watery.
- Use a creamy dressing. Chipotle coleslaw is typically made with a creamy dressing, such as mayonnaise or sour cream. You can also use Greek yogurt or avocado to make a healthier version.
- Add some heat. Chipotle peppers are a key ingredient in this coleslaw. You can use fresh or dried peppers, depending on your preference. If you're using fresh peppers, be sure to remove the seeds and ribs before chopping them.
- Add some sweetness. A little bit of sugar or honey can help to balance out the heat of the chipotle peppers. You can also use grated carrots or apples for a natural sweetness.
- Chill the coleslaw before serving. This will help the flavors to meld and make the coleslaw more refreshing.
Conclusion:
Chipotle coleslaw is a delicious and versatile side dish that can be enjoyed with a variety of meals. It's perfect for picnics, potlucks, and backyard barbecues. With its creamy dressing, smoky chipotle peppers, and crunchy cabbage, this coleslaw is sure to be a hit with everyone who tries it. So next time you're looking for a new side dish to try, give chipotle coleslaw a try. You won't be disappointed!
