1 medium-sized white onion, sliced into thin half-moons
2 garlic cloves, minced
1 (28-ounce) can tomatoes, preferably San Marzano

1 teaspoon dried crumbled Mexican oregano
1/2 teaspoon salt

1 tablespoon brown sugar
2 tablespoons ketchup
2 tablespoons chopped chipotle chiles in adobo sauce (from 7 or 11-oz. can)
1 garlic clove, minced
2 Italian plum tomatoes, chopped
1/2 medium green bell pepper, cut into thin bite-sized strips
