Time 30m

Yield 3 servings

Number Of Ingredients 11

12 oz chicken breast
1 tablespoon coconut oil
1 cup milk
1 onion, diced
3 cloves garlic, minced
1 teaspoon cumin
1 teaspoon dried oregano
1 can canned chipotle pepper, minced
½ teaspoon salt
6 leaves butter lettuce
pico de gallo, or salsa

Steps:

  • Heat the coconut oil in a large nonstick skillet. Toss in the diced onion and salt and sauté for about 5 minutes.
  • Sprinkle in the ground dried oregano and cumin.
  • Add the minced chipotle and garlic and sauté until the garlic is fragrant, about 30 seconds.
  • Pour in the milk and stir the mixture to combine. You can use skim or low-fat milk instead of whole milk, but make sure to reduce it on a lower heat to avoid curdling the milk.
  • Once the mixture has bubbled and reduced slightly, mix in the shredded chicken until evenly coated.
  • Spoon the mixture evenly onto butter lettuce leaves. Top with pico de gallo or salsa and serve.
  • Enjoy!

Provided by heatherhopecs

Categories     One Dish Meal

Time 40m

Yield 8 wraps, 8 serving(s)

Number Of Ingredients 11

2 tablespoons extra-virgin olive oil, divided
1 lb chicken breast (boneless and skinless)
2 -3 chipotle peppers (depending on your love of heat)
3 tablespoons adobo sauce (the chipotles come packed in it)
1/2 cup freshly chopped cilantro
1 lime
1 red bell pepper, diced (or yellow or orange)
3 scallions, thinly sliced
1 avocado, diced
1 head butter or 1 head iceberg lettuce, rinsed and leaves separated
coarse salt & freshly ground black pepper

Steps:

  • Heat the 2 Tbs. oil in a large sauté pan over medium-high. Season the chicken with salt and pepper and sear for 6 minutes on each side until cooked through and browned all over. Move to a cutting board and let sit for 5 minutes. Then dice the chicken.
  • Transfer bell peppers to pan and cook until they just begin to soften, about 3 minutes Remove from pan.
  • In a food processor, combine the cilantro, lime juice, chipotle peppers and the adobo sauce. Process until smooth.
  • Add the chicken back and peppers to the pan, along with the chipotle sauce. Toss until combined.
  • Serve a couple of Tbs. (or more if you're a freak like me) of the chicken mixture in each lettuce cup and garnish with scallions and avocado!

Tips:

  • Choose the right lettuce. Bibb or butter lettuce works best for these wraps because they are sturdy enough to hold the filling without getting soggy. Avoid using iceberg lettuce, as it is too crisp and will break easily.
  • Cook the chicken ahead of time. This will save you time on busy weeknights. You can cook the chicken in a slow cooker, Instant Pot, or on the stovetop.
  • Make the chipotle sauce in advance. This sauce can be made up to 3 days ahead of time and stored in the refrigerator. It will develop more flavor over time.
  • Assemble the wraps just before serving. This will prevent the lettuce from getting soggy.

Conclusion:

Chipotle chicken lettuce wraps are a delicious and healthy meal that is perfect for busy weeknights. They are easy to make and can be customized to your liking. With a little planning, you can have a delicious and satisfying meal on the table in no time.
