Yield Makes about 2 cups

Number Of Ingredients 13

1 cup ketchup
1/2 cup cherry preserves
2 tablespoons fresh lemon juice
2 tablespoons mild-flavored (light) molasses
2 tablespoons golden brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon finely grated lemon peel
1 to 2 canned chipotle chiles in adobo, minced, plus 1 tablespoon adobo sauce from can
1 teaspoon liquid smoke
1 teaspoon onion powder
1 teaspoon unsweetened cocoa powder
Ingredient info: Chipotle chiles in adobo (a spicy tomato sauce) are available at some supermarkets and at specialty foods stores and Latin markets. Liquid smoke is a smoke-flavored liquid seasoning. Look for it at supermarkets and specialty foods stores.

Steps:

  • Bring ketchup, cherry preserves, lemon juice, molasses, brown sugar, Worcestershire sauce, soy sauce, lemon peel, chiles, adobo sauce, liquid smoke, onion powder, and cocoa powder to simmer in medium saucepan, stirring often. Reduce heat to medium-low and simmer 10 minutes, stirring often. Season sauce to taste with salt and pepper. DO AHEAD: Sauce can be made up to 1 week ahead. Cover tightly and refrigerate.

Tips:

  • Use fresh, ripe ingredients: The quality of your ingredients will directly impact the flavor of your salsa. Choose ripe, flavorful tomatoes, cherries, and chipotle peppers.
  • Roast your tomatoes and cherries: Roasting the tomatoes and cherries intensifies their sweetness and flavor. You can roast them in the oven or on the grill.
  • Use a variety of peppers: Chipotle peppers add a smoky, spicy flavor to the salsa. You can also use other types of peppers, such as jalapeños, serranos, or habaneros, to adjust the heat level. Adding the peppers raw will give a fresher flavor, while toasting them first will make them smokier.
  • Add some sweetness: The sweetness of the cherries balances out the heat of the peppers. You can also add other sweeteners, such as honey, agave nectar, or brown sugar, to taste.
  • Use fresh herbs: Fresh herbs, such as cilantro, basil, or oregano, add a bright, herbaceous flavor to the salsa. Just be sure to chop them finely so they don't overpower the other ingredients.
  • Season to taste: Be sure to taste the salsa before serving and adjust the seasonings as needed. You may need to add more salt, pepper, or lime juice to balance the flavors.

Conclusion:

This salsa is a delicious and versatile condiment that can be used in a variety of ways. It's perfect for topping tacos, burritos, and nachos. It can also be used as a dipping sauce for chips or vegetables. No matter how you choose to use it, this salsa is sure to be a hit!
