RASPBERRY CHIPOTLE BBQ SAUCE

Raspberry Chipotle BBQ Sauce image

This is a super sweet and spicy BBQ sauce with fruit that my family and I found in Mexico last Christmas. Try it over grilled tuna like we did, or experiment with chicken or ribs. I have also served this poured over a block of cream cheese to smear over crackers. Nice!

1 tablespoon olive oil
½ cup diced onion
2 tablespoons minced garlic
2 tablespoons chipotle peppers in adobo sauce, chopped, or more to taste
1 pint fresh raspberries
½ cup raspberry vinegar

Time 2h40m

Yield 4 servings

Number Of Ingredients 11

3 cups water
1 tablespoon kosher salt plus more to taste
3 tablespoons pure maple syrup
Small bunch fresh thyme
4 cloves garlic
2 pounds bone-in skinless chicken pieces, such as legs, thighs and breasts, halved
1 (15-ounce) can tomato sauce
1/2 cup low-sodium chicken broth
2 tablespoons apple cider vinegar
1 tablespoon finely chopped chipotles in adobo sauce
1 teaspoon chili powder

Steps:

  • In a large bowl stir the water, 1 tablespoon salt and 1 tablespoon syrup until dissolved. Stir in the thyme. Smash 3 cloves of garlic and add to the brine with the chicken. Cover and refrigerate, 2 to 3 hours.
  • Mince the remaining clove of garlic and add to a medium pot with the tomato sauce, broth, vinegar, remaining 2 tablespoons syrup, chipotles, chili powder and salt, to taste. Bring to a simmer over medium heat. Reduce heat to medium-low and gently simmer until thick, stirring occasionally, 25 to 30 minutes. Reserve 1/2 cup of the sauce for serving.
  • Prepare the grill or grill pan for direct/high heat. Oil the grill grates. Drain the chicken and very pat dry. Grill, turning, until no longer pink near the bone, 15 to 20 minutes (depending on the size of the chicken pieces). Brush with sauce generously as it cooks during the second half of the cooking time. BIRD'S ORANGE CHIPOTLE BBQ SAUCE

Bird's Orange Chipotle BBQ Sauce image

If you like sweet with lots and lots of heat, this is a great sauce. I created this for Buddha and my nephew, since they never seem to get enough 'fire' for their tastebuds. Serve your grilled meat with ranch dressing at the table for a wonderful new level of flavor. (It's also great for your guests who need the heat turned down). Enjoy :)

Categories     Sauces

Time 30m

Yield 2 cups

Number Of Ingredients 9

1 (7 1/2 ounce) can chipotle chiles in adobo (entire contents)
1/2 cup orange marmalade
1/4 cup brown sugar
2 tablespoons apple cider vinegar
2 tablespoons honey
2 garlic cloves, minced
1/2 tablespoon ginger, minced
1 teaspoon ground cumin
salt and black pepper, to taste

Steps:

  • Using a small food processor or an immulsion blender, mix all ingredients well. Simmer over low heat in a small saucepan until reduced and thickened to your liking, about 20-30 minutes.
  • Grill chicken, pork, ribs, or even burgers. Brush with sauce the last 5-10 minutes of cooking.

Tips:

  • Use good quality ingredients: Fresh, ripe tomatoes, flavorful peppers, and aromatic spices will make a big difference in the final taste of your sauce.
  • Don't overcook the vegetables: Overcooked vegetables will lose their flavor and texture, so be careful not to cook them for too long.
  • Let the sauce simmer for a while: Simmering the sauce allows the flavors to develop and deepen, so don't rush this step.
  • Taste the sauce as you go and adjust the seasonings as needed: The perfect sauce is a balance of sweet, smoky, spicy, and tangy, so taste it as you go and adjust the seasonings until you're happy with the flavor.
  • Use the sauce on your favorite foods: Chipotle BBQ sauce is great on chicken, pork, beef, fish, and vegetables. It can also be used as a dipping sauce or marinade.

Conclusion:

Chipotle BBQ sauce is a versatile and delicious sauce that can be used on a variety of foods. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a flavorful sauce to add to your next meal, give chipotle BBQ sauce a try!
