1 bottle (12 ounces) amber beer or 1-1/2 cups chicken broth
1/4 cup packed brown sugar
10 garlic cloves, minced and divided
2 tablespoons ground cumin
7 teaspoons minced chipotle peppers in adobo sauce, divided
1/2 teaspoon salt
1/2 teaspoon pepper
1 boneless pork shoulder butt roast (2 to 3 pounds)
1 cup mayonnaise
1/2 cup minced fresh cilantro
12 Hawaiian sweet hamburger buns
2 medium ripe avocados, peeled and sliced

  • In a large skillet, heat oil over medium-high heat. Add onions; cook and stir until tender, 6-8 minutes. 1/4 cup barbecue sauce
1 teaspoon garlic powder
1 1/2 teaspoons ground cumin
1 lb pork tenderloin, trimmed and cut into 1/2 inch cubes
1 (14 1/2 ounce) can diced tomatoes, undrained
1 tablespoon olive oil
3 cups thinly sliced onions
2 teaspoons chopped fresh thyme
1 teaspoon sugar
6 slices provolone cheese
12 sandwich-cut bread and butter pickles
6 (2 1/2 ounce) kaiser rolls

2 teaspoons garlic powder
1 1/2 teaspoons ground mustard
3 teaspoons chili powder
1 boneless pork shoulder (3 lb), trimmed of fat
1 can (8 oz) tomato sauce
2 canned chipotle chiles, finely chopped
1 tablespoon adobo sauce from canned chipotle chiles
20 burger buns, split
5 medium avocados, pitted, peeled and thinly sliced

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. In small bowl, mix brown sugar, salt, garlic powder, mustard and chili powder. Rub seasoning mixture over pork. Place pork in cooker. Sprinkle any remaining seasoning mixture that doesn't stick to pork over top of pork in cooker.
