Time 15m

Yield 6 servings

Number Of Ingredients 8

12 ounces Brussels sprouts, trimmed
3/4 cup good mayonnaise, such as Hellmann's, plus extra for spreading
2 tablespoons whole-grain mustard
1 tablespoon good Dijon mustard
1 tablespoon apple cider vinegar
Kosher salt and freshly ground black pepper
6 individual or 2 large ciabatta breads, halved and toasted
3/4 pound sliced turkey breast

Steps:

  • Set up a food processor with the slicing disk and process the Brussels sprouts through the feed tube. (You don't need to remove the cores of the sprouts.) Transfer to a large bowl.
  • In a medium bowl, whisk together the mayonnaise, whole-grain mustard, Dijon mustard, vinegar, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the mayonnaise mixture to the sprouts and toss well.
  • Place the ciabatta halves, cut sides up, on a cutting board. Spread a thin layer of mayonnaise over each half. Place a layer of turkey on the bottom halves, pile some of the slaw on top, and place a second layer of turkey on top of the slaw. Sprinkle generously with salt and pepper. Cover with the top halves of the breads, cut sides down. Serve the individual ciabattas cut in half or cut the large ciabattas in thirds and serve.

SMOKEY CHIPOTLE CHICKEN

Categories     main-dish

Time 3h15m

Yield 8 servings

Number Of Ingredients 8

One 7-ounce can chipotles in adobo
1 white onion, chopped
1/2 small jalapeno, seeded and chopped, or more to taste
1/2 cup chopped fresh cilantro, plus more whole leaves, for garnish
Juice of 4 limes plus 1 lime, cut into wedges, for serving
Kosher salt
2 to 3 cups mayonnaise
2 chickens, cut into pieces or 8 chicken thighs, bone-in and skin-on

Steps:

  • In a blender, combine the chipotles in adobo sauce, white onion, jalapeno, cilantro and lime juice. Add a pinch of salt and pulse until combined. Remove to a large non-reactive bowl. Fold in 2 cups of mayonnaise. Taste and adjust seasonings. If it is too hot, add more mayonnaise. Reserve about 1/2 cup marinade for serving.
  • Add the chicken pieces to the remaining marinade, cover and marinate in the refrigerator for at least 2 hours and up to overnight, turning occasionally.
  • Preheat half of a grill to medium-high heat.
  • Remove the chicken from the refrigerator and place the chicken, bone-side down, in the center of the cooking grate. You do not need to turn the chicken pieces as they cook. Grill, with the grill cover down, until the breast meat near the bone registers 165 degrees F and the thigh meat registers 180 degrees F, about 45 minutes. If you don't have a meat thermometer, cook until no longer pink and the juices run clear.
  • Remove the chicken from the grill using tongs and a spatula to preserve the crust on top. Let sit 5 to 10 minutes before garnishing with whole cilantro leaves and serving with the reserved marinade and lime wedges alongside.

Categories     main-dish

Time 7h30m

Yield 4 servings

Number Of Ingredients 12

1 onion, sliced
4 cloves garlic, finely chopped
1 cup barbecue sauce
1 1 1/2- to 2-pound skinless, boneless turkey breast
Kosher salt and freshly ground pepper
1 teaspoon paprika
1 teaspoon garlic powder
3 tablespoons mayonnaise
3 tablespoons apple cider vinegar, plus more if needed
1 1/2 teaspoons sugar, plus more if needed
12 ounces shredded coleslaw mix
Cornbread and pickles, for serving

Steps:

  • Combine the onion, garlic, barbecue sauce and 1/2 cup water in a 5- to 6-quart slow cooker; stir well. Season the turkey breast generously with salt and pepper. Combine the paprika and garlic powder in a small bowl; rub all over the turkey. Place the turkey on top of the onion mixture in the slow cooker. Cover and cook on low until the turkey is cooked through and tender, 7 to 8 hours.
  • In the last 30 minutes of cooking, whisk the mayonnaise, vinegar and sugar in a small bowl. Pour over the coleslaw mix in a large bowl and toss to coat. Season with salt and pepper.
  • Remove the lid from the slow cooker and use two forks to pull the turkey into pieces. Increase the slow cooker to high and let sit, uncovered, until the sauce thickens, about 10 minutes. Season with salt and pepper; add vinegar and sugar to taste.
  • Divide the turkey and coleslaw among plates. Serve with cornbread and pickles.

Tips:

  • Choose the right turkey drumsticks: Look for drumsticks that are evenly sized and have a good amount of meat on them. Avoid drumsticks that are too small or too large, as they will not cook evenly.
  • Use a good quality barbecue sauce: The barbecue sauce is one of the most important ingredients in this recipe, so be sure to use one that you like. You can use a store-bought sauce or make your own.
  • Cook the turkey drumsticks until they are fall-apart tender: This will take about 2 hours in a slow cooker or 3-4 hours in the oven. Be patient, as the longer the turkey drumsticks cook, the more tender they will be.
  • Make the Brussels sprout slaw ahead of time: This will give the flavors time to meld. You can make the slaw up to 2 days in advance.
  • Serve the pulled turkey drumstick sliders immediately: These sliders are best served hot and fresh out of the oven. However, you can also make them ahead of time and reheat them in the oven or microwave.

Conclusion:

These Chipotle Barbecue Pulled Turkey Drumstick Sliders with Brussels Sprout Slaw are the perfect game day food. They are easy to make, delicious, and sure to be a hit with your guests. So next time you are looking for a fun and festive recipe, give these sliders a try!
