Time 18h15m

Yield 8

Number Of Ingredients 11

1 ounce dried chipotle chile pepper
1 ounce dried ancho chile pepper
½ cup water
½ red onion, cut into small chunks
4 cloves garlic
2 teaspoons sea salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
2 tablespoons olive oil
2 ½ pounds skinless, boneless chicken thighs

Steps:

  • Place chipotle chile pepper and ancho chile pepper in a bowl; pour in water. Cover bowl and let sit until peppers are softened, at least 10 to 12 hours. Drain water and remove seeds from peppers.
  • Blend chile peppers, red onion, garlic, sea salt, cumin, oregano, and black pepper in a blender until a coarse paste forms; add olive oil and blend until marinade is smooth.
  • Pound chicken thighs flat with a meat mallet and trim excess skin. Place chicken in a resealable plastic bag and add marinade. Turn chicken several times to coat. Seal bag and marinate at least 8 hours.
  • Preheat an outdoor grill with top and bottom plates for medium-high heat. Remove chicken from bag and discard marinade.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 5 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cut into strips.

CHIPOTLE & APRICOT GLAZED CHICKEN THIGHS

Chipotle & Apricot Glazed Chicken Thighs image

I recently tried this at a restaurant and attempted to duplicate tonight. It came out really good! You can really taste all of the flavors of both the glaze and the marinade. I like to make it healthier with boneless, skinless chicken thighs, but regular thighs make a nicer presentation. I am making this tomorrow night (1/15/10) for a birthday dinner....so I will post a picture :)

Time 30m

Yield 4 serving(s)

Number Of Ingredients 14

2 tablespoons rosemary, stems removed and minced
2 tablespoons thyme, stems removed and minced
2 garlic cloves
1/4 cup olive oil
salt
pepper
16 ounces chicken thighs, cleaned
1 cup chicken stock
1 cup apricot preserves
2 chipotle peppers, canned in adobo sauce
2 teaspoons adobo sauce, from the can above
2 tablespoons parsley, fresh
salt
pepper

Steps:

  • Mix together the marinade and place in a resealable bag with the chicken. Marinate for a few hours or up to over night (which I did on accident as our plans changed).
  • Blend together all of the glaze ingredients.
  • Heat a grill to medium high and place chicken on the grill (after you discard the remaining marinade). Brush the glaze on the chicken liberally each time you flip the chicken.
  • Serve with your favorite side dish. I made a very basic green bean & carrot side with a mashed sweet potato dish.
  • Enjoy!

Tips:

  • Choose the right chicken. Boneless, skinless chicken breasts or thighs are both good options for this recipe. If you use chicken breasts, you may need to pound them thin so they cook evenly.
  • Use ripe apricots. Apricots that are ripe and juicy will give the dish the best flavor. If you can't find fresh apricots, you can use dried apricots that have been soaked in water until they are soft.
  • Don't overcook the chicken. Chicken is best when it is cooked to an internal temperature of 165 degrees Fahrenheit. Overcooked chicken will be dry and tough.
  • Serve immediately. Chipotle apricot chicken is best served immediately after it is cooked. The sauce will thicken as it cools, so if you need to make it ahead of time, reheat it gently over low heat until it is warmed through.

Conclusion:

Chipotle apricot chicken is a flavorful and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet and spicy flavors is sure to please everyone at the table. Serve it with rice, quinoa, or your favorite side dish for a complete meal.
