ROASTED CHIPOTLE SALSA

Roasted Chipotle Salsa image

Dry-roasting vegetables on a flat, heavy pan called a comal tames the sharper flavors and adds a smoky dimension (you can also use a heavy frying pan). Chipotle chiles -- canned smoked jalapenos -- add even further depth of flavor. This salsa is a great alternative for dipping chips or garnishing tacos, tamales or enchiladas.

Provided by Food Network

Time 50m

Yield about 2 1/2 cups salsa

Number Of Ingredients 8

2 cloves garlic, unpeeled
1 small red onion, unpeeled, cut into quarters
4 firm-ripe red tomatoes
1 canned chipotle in adobo
1/2 cup fresh cilantro leaves
1 lime, juiced
2 tablespoons vegetable oil
Salt

Steps:

  • Place a comal or a cast-iron skillet over medium-high heat; do not oil. Place garlic, onion, and tomato (all with their skins) in pan and roast, turning, as needed, with tongs, until blistered and charred all over. Let vegetables cool slightly, then peel off skins.
  • In a blender, combine vegetables with chipotle chile and cilantro leaves. Whirl until coarsely pureed. (If using a mortar and pestle, finely chop cilantro leaves with cooked, peeled onion and garlic. Mash tomatoes and chipotle in mortar, then stir in chopped vegetables and cilantro). Squeeze lime juice into salsa, then stir in oil. Taste, season with salt, and serve. Can be made ahead, covered, and refrigerated up to 3 days.

RED-RIBBON ROASTED SALSA

Red-Ribbon Roasted Salsa image

This recipe originated from a recipe that was supposed to duplicate that of my favorite Mexican restaurant. I've heavily modified the original recipe and like this variation SO much more! It's relatively easy. This makes a medium-hot salsa. I've named it 'Red-Ribbon' because it took second place at my company salsa competition last Cinco de Mayo (lost first in a tie-breaker!).

Time 3h

Yield 12

Number Of Ingredients 8

10 dried chipotle peppers
12 roma (plum) tomatoes
¼ yellow onion, coarsely chopped
2 cloves garlic, or more to taste
2 tablespoons white vinegar
2 teaspoons salt
1 pinch ground black pepper, or to taste
1 lime, juiced, or more to taste

Steps:

  • Fill a saucepan with water, stir in dried chipotle peppers, and bring to a boil. Reduce heat to low and simmer until peppers are soft, about 30 minutes. Drain and let cool. When peppers are cool, remove stems, cut open peppers, and remove seeds. Set peppers aside.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Grill tomatoes on hot grate until skin blackens and begins to peel, turning tomatoes often to blacken all sides, about 10 minutes. Set grilled tomatoes aside to cool.
  • Place grilled tomatoes, chipotle peppers, yellow onion, white vinegar, salt, black pepper, and lime juice into a food processor; pulse a few times, then process until almost pureed.
  • Refrigerate until flavors have blended, at least 2 hours to overnight.

Tips:

  • For the best flavor, use ripe, flavorful tomatoes. Roma tomatoes are a good choice because they have a low water content and a concentrated flavor.
  • Roast the red peppers before adding them to the salsa. Roasting brings out their sweetness and smokiness.
  • Use a good quality chipotle pepper in adobo sauce. The chipotle peppers add a smoky, spicy flavor to the salsa.
  • Add some fresh cilantro to the salsa just before serving. Cilantro adds a bright, citrusy flavor that complements the other ingredients well.
  • Serve the salsa with tortilla chips, tacos, burritos, or any other Mexican dish.

Conclusion:

This chipotle and roasted red pepper salsa is a delicious and easy-to-make salsa that is perfect for any occasion. It is spicy, smoky, and flavorful, and it is sure to be a hit with your friends and family. So next time you are looking for a quick and easy appetizer or condiment, give this salsa a try. You won't be disappointed!
