1/2 cup chipotle chiles in adobo sauce
2 tablespoons honey
2 scallions, white and green parts, roughly chopped
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
Four 6- to 8-ounce tilapia fillets
Coleslaw and lemon wedges, for serving

Steps:

  • Put the chipotle chiles, honey, scallions, 2 tablespoons of the oil, 1 teaspoon salt and a few grinds of pepper in a food processor and pulse until combined. Transfer to a large bowl, add the tilapia and toss to coat evenly; set aside for 10 minutes at room temperature.
  • Heat the remaining 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the tilapia and cook, turning once, until just cooked through, 5 to 7 minutes. Serve with coleslaw and lemon wedges on the side.

4 ounces sour cream
1/4 cup adobo sauce, from chipotle peppers
1 tablespoon lime juice, fresh
1 teaspoon lime zest
1/8 teaspoon cumin
1/8 teaspoon chili powder
1/4 teaspoon Old Bay Seasoning
salt and pepper
6 ounces Doritos
1/2 tablespoon dried chipotle powder
1/2 tablespoon cumin
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2-1 tablespoon jalapeno
1 lb tilapia fillet
1 lime, juice of
1 egg

Steps:

  • Combine all ingredients for the dressing in a small bowl. Set in the frig. for two hours.
  • In a food processor, put Doritos, spices and jalapeno and process until finely crushed. Place on waxed paper when ready to cook.
  • Preheat oven to 350 Degrees.
  • In a med. bowl, whisk egg.
  • Dip fish into egg and then coat both sides of the fish with crust ingredients. Be sure they are well coated.

  • Preheat broiler.

2 canned chipotle peppers in adobo, chopped, plus 2 tablespoons adobo sauce
2 tablespoons olive oil
2 limes, 1 zested and juiced, 1 sliced in half
One 16-ounce bag broccoli slaw
Kosher salt and freshly ground black pepper
5 mini sweet peppers, sliced into rings
1 to 2 serrano chiles, sliced thinly
1 pound cod fillets
1/2 cup chopped fresh cilantro
12 corn taco shells, blistered
Sliced avocado, sour cream, hot sauce and lime wedges, for the tacos

Steps:

  • Preheat the oven to 425 degrees F.
  • Mix together the honey, chipotle peppers and adobo sauce, 1 tablespoon of the olive oil and juice and zest of 1 lime in a small bowl to make a glaze. Set aside.
  • Put the broccoli slaw in the bottom of a baking dish. Drizzle with the remaining olive oil and season with a pinch of salt and pepper, then toss. Scatter over the sliced sweet peppers and chiles. Top the slaw and peppers with the cod fillets. Season the cod with a good pinch of salt and pepper. Pour the chipotle glaze over the fish and around the baking dish over the slaw.
  • Roast until the fish is cooked through and flaky, 18 to 20 minutes. Remove from the oven and immediately squeeze over the juice of the other lime. Flake the cod into large chunks and sprinkle over the chopped cilantro.
  • To build the tacos, place a couple chunks of cod into each taco shell. Top with a pinch of slaw, some sliced avocado, sour cream and hot sauce. Garnish with a lime wedge and squeeze over a little juice before eating.

3 tablespoons chipotle chile powder
1 teaspoon garlic powder
1 tablespoon salt
1 tablespoon cracked black pepper
1 pound tilapia fillets, cut in half lengthwise
¼ cup canola oil
1 mango - peeled, seeded and diced
1 jalapeno pepper, seeded and minced
1 small red onion, finely chopped
1 clove garlic, minced
1 bunch cilantro, chopped
1 tablespoon lime juice
1 tablespoon pureed chipotle peppers in adobo sauce
1 clove garlic, minced
¼ cup mayonnaise
2 (15 ounce) cans black beans, rinsed and drained
2 cloves garlic, minced
1 pinch salt
3 cups hot cooked Spanish rice
8 (6 inch) whole wheat tortillas
1 (8.5 ounce) package coleslaw mix

Steps:

  • Stir together the chipotle chile powder, garlic powder, salt, and cracked black pepper in a shallow bowl. Brush the tilapia fillets with the canola oil, and press into the spice mixture to coat, and set aside. Make the salsa by stirring together the mango, jalapeno, red onion, 1 clove garlic, cilantro, and lime juice in a separate bowl, and set aside. Make the aioli by stirring together the chipotle puree, 1 clove garlic, and mayonnaise in a small bowl, and set aside.
  • Bring the black beans and 2 cloves of garlic to a simmer in a saucepan with a pinch of salt. Cover, and cook over low heat for 20 minutes. Meanwhile, heat a large skillet over medium-high heat, and cook the tilapia until opaque in the center, and crispy on both sides, about 7 minutes. Heat the tortillas in a skillet over medium heat, and keep warm.
  • To serve, place the tortillas on a plate, spoon on some Spanish rice and black beans. Top with some of the coleslaw mix, hot tilapia, and a spoonful of the mango-cilantro salsa. Top with a dollop of chipotle aioli to serve.

6 large tilapia filets
3 eggs
1/2 cup milk
1 teaspoon Grey Poupon mustard
1 cup shredded parmesan, + 2 TBSP. for topping
1 cup Italian seasoned breadcrumbs
1/2 teaspoon chipotle powder
1/2 teaspoon finely mined garlic
salt and pepper to taste
Cilantro or parsley for garnish

Steps:

  • Fill a ziploc bag with 1/2 cub vinegar, add 2 cups water. Close bag and set aside Take the eggs, milk and Grey Poupon mustard and stir together in a shallow bowl, set aside. Take the next dry ingredients and mix together in a wide shallow bowl, set aside. Take the fish from the ziploc bag and rinse lightly with water, setting aside to drain. Take a filet and coat both sides in the wet mixture. Coat both sides in the dry mixture. Continue with rest of fish in same fashion. Put in olive oil sprayed baking dish in 450 degree oven for 12 minutes. You can place the fish filets closely together for a tight fit. Top with remainder 2 TBSP. parmesan. Serve hot over rice with avacado, tomato and red onion relish.

1 tablespoon fresh lime juice
4 6-ounce tilapia fillets
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup finely crushed tortilla chips

1 egg
Jalapeño tartar sauce:
1/2 cup mayonnaise
1 jalapeño, stemmed, seeded, and finely diced
1 garlic clove, minced
1 teaspoon chopped fresh cilantro
1 teaspoon fresh lime juice

  • Preheat oven to 400°. Lightly grease a baking sheet or line with parchment paper.
