1 tablespoon soy
1 tablespoon honey
1 tablespoon butter
2 tablespoons olive oil
12 ounces green beans, trimmed
Kosher salt
1 tablespoon minced garlic

Steps:

  • 1. Combine the soy, honey and 1 tablespoon water in a small dish and set near the stove. Set a shallow serving dish near the stove also. 2. in a 10 inch straight sided saute pan, heat the butter with the oil over medium-high heat. When the butter is melted, add the green beans and 1/2 teaspoon salt and toss with tongs to coat well. 3. Cook, turning the beans occasionally, until most are well browned, shrunken and tender, 7 to 8 minutes. Note that the butter in the pan will have turned dark brown. 4. Reduce the heat to low, add the garlic and cook stirring constantly with a heatproof rubber spatula, until the garlic is softened and fragrant, 15 to 20 seconds. 5. Carefully add the soy mixture. Cook, stirring until the liquid reduces to a glazey consistency that coats the beans, 30 to 45 seconds. 6. Immediately transfer the beans to the serving dish, scraping the pan with the spatula to get all of the garlicky sauce. Let sit 2-3 minutes for flavors to develop and serve.

1-2 t. sesame oil
1 T. garlic, pressed
1 T. grated ginger
1/2 t. chili paste
Sauce: 2t. sugar, 2T. soy, 2T.bean sauce or hoisin, 2T. chinese rice wine.

Steps:

  • Heat peanut oil in wok. Cook beans over mod. high heat til well wilted and partially blackened. Remove from wok. Turn off heat and add the garlic, ginger and chili paste. Add a little more oil if needed. Let this sit a minute or two in the wok. Mix together sauce ingredients. Turn heat back on, add sauce ingredients and beans. Saute until sauce is reduced and glazes the beans. Top with a little sesame oil.

1 clove garlic, thinly sliced
1/2 lb fresh green beans, trimmed
1/2 Tbsp sugar
2 tsp soy sauce
1/2 tsp toasted sesame seeds

  • 1. Just blanch green beans in boiling water. Drain and set aside.
  • 2. Heat oil in a skillet over medium-high heat. Stir in the garlic, and cook until just starting to soften and become aromatic.
